Curry Leaf Pepper Chicken

Curry leaf pepper chicken / Karuveppilai Chicken is both tasty as well as healthy ,Curry leaves has lot of medicinal properties but we always pick it out of our dishes before eating them ,so this is a recipe dedicated to the glory of our curry leaves. In this recipe we are going to extract all the flavors of the curry leaves and then infuse into the chicken.

INGREDIENTS




To make Curry leaf Powder
1 inch Cinnamon stick
2
Cloves 
3Cardamom
1 tsp
Cumin Seeds
1 tsp Fennel Seeds
1 Tbsp. Pepper corns
1/2 cup Curry leaves
For Curry leaf Chicken
250 g Boneless Chicken pieces
3 tbspOil
3 cloves
garlic
1 inch Ginger
3 Green chilies
15 small onion
1/4 tspturmeric powder
1 tsp
Coriander powder
some Curry leaves

Salt to taste


Cooking Method


Step 1) to make curry leaf powder dry roast cinnamon , cardamom, cloves, cumin seeds, fennel seeds, pepper corns for 2 minutes on a medium heat and then add a handfull of curry leaves and again roast it for couple of more minutes.


Step 2) Transfer this to a blender and grind it to a fine powder (allow the mixture to cool and then grind)


Step 3) To make curry leaf chicken heat some oil add some chopped ginger and some chopped garlic (I prefer to use chopped one rather than ginger garlic paste) and some green chilies. After the raw smell is gone add turmeric powder , and a handfull of shallots 
once the shallots are soft and golden add some curry leaves , coriander powder and the freshly ground curry leaf powder (from step 1) and mix it well .


Step 4) Then add the chicken pieces and mix it well with the masalas and cook until the chicken is fully done.(It takes around 7 minutes if your chicken pieces are small - medium sized)


Our Delicious Healthy and tasty Curry leaf chicken is ready to be served..Happy Cooking :) 


Note:
  • You can make this curry leaf powder and keep it handy and can be used along with rice too.
  • Since I have already added 1 tbsp pepper corns while making the masala powder I have not added chili powder If you want it to be more spicy you can add some chili powder.
  • I prefer to use boneless chicken breast for making curry leaves chicken ,However chicken with bones also taste good.
  • For curry leaf chicken shallots adds more taste and flavor than Regular onions.

    Greetings from Muscat. Just subscribed as i found your recipes so interesting. A quick question re Curry leaf pepper chicken. Could u be kind enough to explain how to adjust the spices and other ingredients to prepare from one to one and half kg. chicken bec i always mess up when i try to double or triple the ingredients.
