this recipe we are going to cover both boondi and laddu. whenever I start making this recipe (ladoo) once I finish making boondis, the boondis will disappear from the plate. But fortunately today I got a chance to make laddus. Lets enjoy this wonderful sweet delight.
Ingredients:
1 ½ cup Besan Flour / Chickpea flour
|
2 cups of sugar
|
2 cups of water
|
Cashew nuts
|
Raisins
|
1 tbsp ghee / clarified butter
|
Oil for frying
|
Servings : 6 (makes 12 Laddos)
Preparation time: 45 minutes

Step 1:
Into a mixing bowl add besan and water(( I have used 1 cup approximately ) i.e 1 tbsp less for 1 cup) and make a lump free smooth batter.First add little water and make into smooth paste and then add more water to form a pouring consistency (if you add too much water at once you will end up with lumps so this way of making ensures lump free batter)
Step 2:
The consistency of the batter is very important.To check the batter pour a little amount of batter on to the ladle over hot oil and look at the shape of the boondis formed, if they are round shaped then the batter is at perfect consistency if they are elongated then the batter is thick add some more water if it is too watery then they will fall too quickly and form clumps so add more besan to it.
Step 3:
Fry the Boondis in hot oil,Temperature of oil should be very hot as soon as you drop the batter it should float on the surface of the oil,else it will settle at the same place,it will soak up lot of oil and the boondis wont be round it will be flat.
Step 4:
To make sugar syrup melt 2 cups of sugar add 1 cup of water and bring it to 1(one thick string) string consistency. The consistency of sugar syrup is very important.
Step 5:
Roast some nuts.Melt 1 tbsp Ghee/Clarified butter roast some cashews and raisins
Step 6:
Combine Fried boondi ,nuts,sugar and enjoy as boondi (you can add boondis on the top of while payasam(milk payasam) to enjoy awesome tasty payasam (My favourite))
Step 7:
You can continue to make Sweet Laddu,if you find difficulty in making shapes grind some of the boondis (just pulse it for 15 seconds) and mix it with the regular boondis,you will get perfect shapes
If the boodis stick to your hand apply some ghee to your palms to avoid stickiness.

- To get perfect shapes grind/smash some of the boondis and add it to regular boondi and then form laddus it will be lot easier and you will get the perfect shape
