Mutton Chukka Recipe / Mutton Roast

Mutton Chukka / Mutton Varuval is a recipe in which mutton is roasted with all the spices and the meat is so tender and juicy that it will melt in your mouth. This mutton roast is the perfect side dish for any rice varieties.Before marriage I never liked lamb (mutton) but my husband is a great fan of mutton so I decided to make mutton recipes for him.Now even i couldn't restrict myself from eating mutton.

INGREDIENTS


500g

Mutton / Lamb 
1 tsp Cumin seeds
2 tsp
Pepper corns
1 tspCoriander seeds
4
Dry Red Chili 
150g Shallots / small onion
1 Tbsp Ginger Garlic paste
5 Green chilies
1/2 tsp Turmeric powder
Green chilies
2 TbspOil

Salt to taste

Cooking Method


Step 1) Lets prepare masala for mutton, powder Cumin Seeds, Pepper corns, Dry red chili, coriander seeds in a blender and grind it to a fine powder and keep it aside


Step 2) In a pressure cooker add the mutton pieces, along with the lamb add turmeric powder, freshly ground mutton masala(in step 1),  required salt with 1/2 cup of water and cook for 3 whistles.


Step 3) In a pan heat some oil and add green chilies , curry leaves, shallots, salt and saute until shallots are golden and then add 1 tbsp ginger garlic paste and saute it for a couple of minutes until the raw smell is gone


Step 4) Add the cooked mutton pieces and cook for some more time until all the water has been evaporated and the mutton become a little dry


Delicious Mutton Roast / Mutton chukka is ready.. enjoy this side with any rice varieties and also goes excellent with Dosa , puri and Chappathi ...Happy Cooking!!!


Notes:
  • Do not add too much of water while cooking the mutton because the mutton will also release lot of moisture (we want our chukka to be dry)
  • Especially for mutton recipes use shallots because shallots enhances the taste of our mutton recipes
  • If you want the mutton to be extra spicy add 2 tsp chili powder while cooking the mutton
  • Mutton takes lot of time to cook,so always use pressure cooker.
