Adai Recipe

Adai is a traditional recipe of Tamil Nadu made will dal and rice. This recipe is very easy and simple to make all we need is dal , rice and a very few ingredients. In most of the hotels they add 2 portions of rice to make it cost effective but I have used equal quantities of rice and lentils to make it more nutritious. We can also play with ratios and make it taste according to your taste preference. my standard ratio is 1:1:1:1 with this ratio i can assure that we can make crispy and delicious Adai Dosai every time.
This recipe makes around 15 dosa and the best companion for this adai is Avial and coconut chutney. This recipe is packed minerals and nutrients which is required for our day-to-day activities.

Quantity Ingredients for Adai Recipe

For the Batter 
1/2 cup Thoor Dal / Thuvaram Paruppu
1/2 cup Chickpea / Channa Dal / Kadalai Paruppu
1/2 cupSkinless black gram / ulunthu / Urad Dal
1/2 cupRaw rice / Arisi ( or any rice) 
6-8dry red chilies
15shallots
1/2 cupSalt to taste

To Temper
1 tbspOil
2dry red chilies
1/4 tspAsafoetida / Hing / Kaayam
1/4 tspTurmeric powder

Few Curry leaves

Cooking Method


1) Rinse Raw Rice, Thoor Dal, channa dal, skinless black gram  in water for a couple of times and then add enough water to cover the dal and also add dry red chilies and soak it for minimum 1 - 2 hour


2) Transfer all the soaked Lentils in a mixer jar and grind it into a fine- coarse paste, do not add too much of water , add a very little amount of water while grinding if needed we can add more later.


3) To Temper:
Heat oil in a pan and add dry red chilies ( crush them into very small pieces) add Asafoetida, Turmeric powder and Curry leaves (Cut them into small pieces). Do this on a low flame to prevent from burning.


4) Add the tempering to the batter and also add finely chopped shallots, salt and mix it well to get a semi thick batter consistency (add water if required). should be thicker than normal dosa batter.


5) Heat an iron pan and pour some batter over it and spread it into a thin layer. Drizzle some oil or Ghee on the top. Once it turns golden on the one side flip it to the other side and cook until both the sides turns golden and crispy


That's it our healthy and tasty adai dosai is ready to be served with a side of chutney and avial. Adai dosa is a traditional recipe of south India which is both healthy and tasty. The batter is made with lentils and rice and then spread thinly and cooked until crispy. Adai dosa recipe is and excellent recipe for breakfast and for dinner.

Ingredients:
  • 1/2 cup Thoor Dal
  • 1/2 cup Chickpea
  • 1/2 cup Skinless black gram
  • 1/2 cup Raw rice
  • 6-8 dry red chilies
  • 15 shallots
  • Salt to taste
  • 1 tbsp Oil
  • 2 dry red chilies
  • 1/4 tsp Asafoetida
  • 1/4 tsp Turmeric powder
  • Few Curry leaves

  • Instructions:
    1. wash and soak rice and lentils in water for 2 hours
    2. grind it to a fine-coarse paste
    3. prepare the tempering
    4. add tempering, shallots and salt to the batter and bring it to a semi thick batter consistency.
    5. pour a laddle full of batter on a hot pan and spread
    6. drizzle some ghee on top and cook until both the sides turns cripsy
