Basundi Recipe

Basundi Sweet Recipe is a very delicious Indian dessert made with milk, nuts and sugar, it is quite simple and easy to make. It is made by slowly evaporating the milk and reducing it to 1/4 of its volume. The added nuts gives nice taste and each spoon filled with nuts makes the recipe more interesting. Saffron gives nice color and lovely aroma to Basundi. Some people like to add condensed milk but i don't thick so we need condensed milk for this recipe because it simply tastes wonderful without that also.
Initially I thought Basundi is difficult to make but when i made it for the first time I felt that it was the simplest dessert which I have ever make and it simply tasted awesome with loads of flavor. My family really enjoyed the dessert and my husband asked me to make it again so I made it again on the same day and still making .....

Quantity Ingredients to make Basundi Recipe

2 Liter Full Fat Milk  (4 cups approximately )
1/4 Cup Sugar (you can increase by  2 tbsp )
2 tbsp Chopped Pistachios 
2 tbsp  Chopped Almonds
2 tbsp Chopped Cashew nuts 
2 tbsp Cashew nut Powder
15 strandsSaffron
1/4 tsp Cardamom powder

Cooking Method


Step 1) Heat Milk in a non stick pan and allow the it to boil. Once the milk comes to boil turn down the heat to low and let it simmer for 10 -15 minutes or until the milk reduces half in volume.
Once the milk reduces to half add the chopped nuts and the cashew powder (Cashew powder adds extra base and it thickens the basundi and really adds nice awesome taste.)
Mix well and add sugar. Do not add all the sugar at once because once the milk thickens and reduces in volume you will find it too sweet , so for 4 cups of milk 1/4 cup of sugar will be sufficient.Taste it at the end and if needed add more at the end.

Step 2) Gather the Milk solids settled at the sides of the pan and drop it into the milk and mix well.Do this very often because the milk solids gives that richness to the basundi. Scrape the edges very often.Once the milk is almost thickened add Saffron strands and cardamom powder (you can skip cardamom if you don't like the flavor) and cook until milk thickens and reduces to 1/4.

That's it our delicious Diwali sweet Basundi is ready, chill it in the refrigerator before serving and enjoy. You can sprinkle some nuts on the top before serving. You can also add rose essence at the end for extra flavor.Use full fat milk to make this dessert otherwise we will end up with a very little amount of basundi.
