Sweet Aval Recipe / Sweet Poha Recipe

Sweet Aval is made with pressed rice, coconut and jaggery. Whenever i feel bored or run out of time the first think that comes to my mind is this delicious sweet aval because it is quite easy to make and is loved by all ages of people.There are lot of variations we can make with this inippu aval. My mom always add shredded or powdered jaggery to the aval myself and my sister enjoyed the way my mom makes but my husband hates the jaggery chunks in the aval so i decided to overcome this problem by melting the jaggery and adding it to the aval so the sweet is evenly distributed and the added cashews adds richness and crunchiness to the aval.
You can also add sugar instead of jaggery and some people love to add milk but i don't prefer to add milk i like to add water and coconut.

Serving Size           : 2  people

Quantity Ingredients to Sweet Aval
1 cup
Pressed Rice / Aval
3/4 Cup Jaggery
1/2 cup Grated Coconut 
1 tbsp  Ghee
10-12 Cashew nuts 
1/4 cup Water
pinchCardamom powder

Cooking Method

Step 1) in a sauce pan melt ghee , once the ghee is melted  add cashews and roast until it turns golden. once the cahews turns golden take it off from the pan and transfer it to a bowl. 
Now in the same pan melt jaggey with water and dissolve completely.

Step 2) Pour the melted jaggery on the aval (filter the jaggery syrup through a strainer to remove any impurities) .Mix it well and then add the grated coconut , pinch of cardamom powder (if you dont like the flavor of cardamom then you can skip) and also add the roasted cashew nuts.Mix well and let it stand for 5 minutes to soften a bit and then enjoy.

    For Basundi Recipe:
  • 1 cup flattened Rice / Aval
  • 3/4 Cup Jaggery
  • 1/2 cup Grated Coconut
  • 1 tbsp Ghee
  • 10-12 Cashew nuts
  • 1/4 cup Water
  • pinch Cardamom powder
  1. roast cashews in ghee
  2. dissolve jaggery in water
  3. Filter jaggery and add it to the aval along with coconut, cardamom powder and roasted nuts
  4. mix well and enjoy !!!
