Vegetable Salna Recipe / Vegetable Gravy

Vegetable salna / Vegetable gravy is a perfect side dish recipe for Parotta and also goes very well with chapathi, Idli and Dosa. This is the most famous and most ordered recipe in small hotels called " Thallu Vandi " in Tamil Nadu and is one of my favorite recipe too. This recipe is loaded with lots of nutrition and at the same time it tastes wonderful. I call Veg Salna and Parotta as Romeo - Juilet because it makes an excellent combination. 
Freshly ground masala makes the veg Salna more flavorful and aromatic.

QuantityIngredients for Vegetable Salna Recipe
For Masala
1 tsp Oil

1 cinnamon, 3 cardamom, 4 cloves
2 tspFennel Seeds / Soambu
1 tspCumin Seeds / Jeeragam
2Onions
Tomatoes
1/2 tspTurmeric powder
2 tspCoriander powder
2 tspChilli Powder
1 pieceGinger
4 clovesGarlic
1/4 cupGrated Coconut

For Veg Gravy
2 tbspOil

2 bay leaves, 1 cinnamon, 1 tsp fennel seeds
3Green chilies
2 cupVegetables ( Beans , Carrot , Peas, Potato)
requiredWater

Salt to Taste 

Coriander leaves for Garnishing

Cooking Method


Step 1) Preparing the base:
Heat oil in a pan and add cinnamon stick, cardamom, cloves , fennel seeds and cumin seeds. Roast it for a minute and then add onions ,tomatoes , ginger and garlic.


Step 2) Masalas for Veg Gravy:
Add in the masalas - Turmeric powder, coriander powder, chili powder and mix well. Add some water and cook until the raw smell of the masalas is gone ( 6- 7 minutes)


Step 3) Grinding:
Once the raw smell is gone turn off the heat and transfer the mixture to a blender, also add grated coconut to it and once the mixture cools down grind it to a smooth paste.


Step 4) Vegetables for Veg Salna :
Now to make veg salna heat oil and add bay leaves, cinnamon and fennel seeds and green chilies. Fennel seeds adds more flavor and aroma to the recipe.
Then add the vegetables, I have used  Beans , Carrot , Peas and Potato, you can add any vegetables of your choice. Saute the veggies for a couple of minutes.


Step 5) Vegetable gravy:
Then add the ground masala , required water, required salt and mix well. Cover the cooker and cook for 2 whistles. If you are using a regular pan then cook until the veggies are 100 % cooked.



Step 6) Garnishing:
Finally add a handful of coriander leaves, mix it once and serve.

    For Masala:
  • 1 tsp Oil

  • 1/2 tsp Turmeric powder
  • 2 tsp Coriander powder

  • 4 cloves Garlic
  • 1/4 cup Grated Coconut
  • For Veg Gravy :
  • 2 tbsp Oil
  • 2 bay leaves, 1 cinnamon, 1 tsp fennel seeds
  • 3 Green chilies
  • 2 cup Vegetables ( Beans , Carrot , Peas, Potato)
  • required Water
  • Salt to Taste
  • Coriander leaves for Garnishing


  • Instructions:
    1. Roast the spices and add onions tomatoes and the masalas.
    2. Allow the mixture to cool and grind it along with coconut
    3. Heat oil and temper. Add the freshly ground masala, water and required salt
    4. Cook for 2 whistles
    5. Garnish with coriander leaves .
    6. Our Delicious Vegetable salna is ready to be served
