Lemon Rice Recipe

Lemon rice is a quick lunch box recipe loved by all Children and adults. It can be made under 5 minutes and tastes delicious. When I was a studying in school my mom used to make this variety rice very often, she prepares potato onion fry and fryums as a side dish for this Lemon rice. The beauty of this recipe is it stays fresh for a long time so whenever we go on a picnic my mom packs this recipe in banana leaf, the smell of banana leaf and the rice makes the dish more appetizing. Now a days I follow the same when we go on small picnics. My mom also makes thovayal (made with coconut) as a side and when I stayed in hostel they serve thick coconut chutney as a side dish with this lemon Rice / Elumichai sadam which also tastes good.

QuantityIngredients for Lemon Rice Recipe
2 tbspOil
1/4 tspMustard seeds
1 tspChanna Dal / Kadalai paruppu
1 tspUrad dal / Ulunthu
3dry Red Chilies
3Green Chilies
1 springCurry leaves
1/2 tspTurmeric powder
pinch ofAsafoetida / Kaayam / Hing
3 tbspPeanut
10 - 12Cashews
2 small Lemon or as required 
2 cupCooked rice

Salt to tatse

Cooking Method

Step 1) Heat oil in a pan and temper with - mustard , channa dal and urad dal. Once the dal changes it color slightly add peanuts and cashew nuts roast it for few more minutes until it chages to golden brown.

Step 2) Add dry red chilies ,green chilies and curry leaves. Give it a stir and add turmeric powder and a pinch of Asafoetida. Switch off the stove immediately.

Step 3) Once it is cooled slightly add the lemon juice, salt and mix well.

Step 4) Add the cooked rice and mix well. You can adjust or reduce the sourness of lemon by adding extra cooked rice.

That's it our lemon rice / Elumichai Sadam is ready to be served . I made potato fry and fryums as a side for this delicious and tangy lemon rice.
