Chicken Salna Recipe

Chicken Salna is one of the most famous and favorite side dish recipe for parotta of all time, I always wonder how the road side vendors and motels make this delicious chicken salna which makes us to crave for it . No matter how much we try at home the holtel salna still tastes unique. Finally I got this recipe from my dad's friend who own a small hotel in Nagercoil. He didn't give the exact measurements so i experimented it several times and finally i got the perfect recipe of this chicken salna which tastes quite similar to the one which we order from small hotels. I asked that uncle to check for taste and he gave me a very positive feedback, my whole family and friends liked the recipe.I am very happy to share this recipe with you.

Another main thing that adds more taste to the recipe is the fat from chicken bones and the skin, yes in the hotels they add only the pieces that is not used for making any other recipes , they don't use the portions like 
Chicken legs       -  Chicken Drumstick
Chicken wings    -  Chicken Lollipop
Boneless pieces  -  Chicken 65 , Kadai Chicken 
flesh with bone   -  Chicken Biryani , Chicken Curry 


Chicken-Salna-for-Parotta

QuantityIngredients for Chicken Salna Recipe
For Masala
1 tsp Oil

1 cinnamon, 3 cardamom, 4 cloves
2 tspFennel Seeds / Soambu
1 tspCumin Seeds / Jeeragam
1 tspPepper Corns / Milagu
1 tspPoppy Seeds / Kasa kasa 
1/2 cupgrated Coconut

For Chicken Curry 
1/2 kgChicken 
2 tbspOil

2 bay leaves, 2 cinnamon, 1 tsp fennel seeds
2 largeOnions
1 tbspGinger Garlic Paste
Green Chilies 
1/2 tspTurmeric powder
1 tbspCoriander powder
1 tbspChilli Powder
2Tomatoes
requiredWater

Salt to Taste 

Coriander leaves for Garnishing

Cooking Method


Step 1) Masala for chicken:
Heat oil in a pan and add the whole spices- cinnamon, cloves, cardamom, pepper corns, fennel and cumin seeds and roast it for few seconds.
Then add poppy seeds, grated coconut and saute until coconut turns golden.





Step 2) Grinding:
Allow the mixture to cool completely and then grind it to a fine powder.


Step 3) 
Heat oil and add cinnamon, bay leaves and fennel seeds, adding fennel adds more taste to the chciken Salna. Then add sliced onions, some salt and saute it for a couple of minutes.


Step 4)
Once the onions turns golden add the masalas - Ginger Garlic Paste, green chilies, turmeric powder, coriander powder, chili powder and the freshly ground masala and mix well.


Step 5) 
Immediately after mixing the masalas add sliced tomatoes and cook for 2 minutes until the tomatoes turns soft.


Step 6) 
Add the chicken pieces , mix well with the masalas and add enough water, salt if required and mix well. Add little extra water because the chicken salna which we buy from hotels will be a little watery.
Cover the cooker and cook for 3 - 4 whistles on a medium heat. If you are using a pan to cook then cover it with a lid and cook until the chicken is fully done.It may take around 30 minutes.


Step 7)
Once the Pressure is fully released open the cooker, you will see oil floating on the top indicating our chicken salna is ready.
Finally add a handful of chopped coriander leaves for garnishing.




That's it our Chicken Salna is ready to be enjoyed with Parotta / Chapthi and this curyy also goes excellent with Idli and dosa too. Freshly ground masala and the chicken bones adds unique taste to the salna.

Ingredients:
    For Masala:

  • 1/2 kg chicken
  • 2 tbsp Oil
  • 2 bay leaves, 2 cinnamon, 1 tsp fennel seeds
  • 2 large Onions
  • 1 tbsp Ginger Garlic Paste
  • 3 Green Chilies
  • 1/2 tsp Turmeric powder
  • 1 tbsp Coriander powder
  • 1 tbsp Chilli Powder
  • 2 Tomatoes
  • required Water
  • Salt to Taste
  • Coriander leaves for Garnishing


  • Instructions:
    1. Roast the spices and grind
    2. Heat oil and Saute onion with the masalas and add tomatoes and cook for 2 minutes
    3. Add chicken , water and cook for 2 whistles.
    4. Garnish with coriander leaves .
    5. Our Delicious chicken salna is ready to be served
