Step 1)
Heat oil in a pan and add cumin seeds, then add finely chopped onions , required salt and saute it for a couple of minutes. Once the onions turns translucent add green chilies, turmeric powder, chili powder and mix well.
Notes:
- We can also use Pav Bhaji masala instead of garam masala powder.
- You can also experiment by adding ginger garlic paste if you prefer.
- we can also add capsicum at the end.
- We can also make the same recipe without adding tomatoes.
Egg Bhurji is nothing but scrambled eggs cooked with onion tomatoes and well seasoned with masalas. It is also known as muttai podimas or egg podimas in Tamil.This recipe is quite easy to make and tastes delicious.

- Saute onion with the masalas and add tomatoes and cook for 5-6 minutes
- Beat eggs and add it to the onion tomato mixture and cook until fully done
- Finally add pepper powder and garnish with coriander leaves
