Egg Bhurji Recipe

Egg Bhurji is nothing but Indian style scrambled eggs well seasoned with masalas, It quite simple to make and all we need is just few ingredients. Whenever we are bored of eating the same style of egg recipes this Egg Burji will definitely makes us feel happy. The beauty of this recipe is we can stop at any point we like , if you like it little soft then you can stop at a very early stage, but I love to have them dry so I have cooked the eggs thoroughly until fully done. This recipe is called as Muttai Podimas in Tamil.

Quantity Ingredients for Egg Burji Recipe
2 tbsp  Oil
1/2 tsp Cumin Seeds
2 largeOnions
2 Green Chilies 
1/4 tsp Turmeric powder
1/2 tsp Garam Masala Powder
1 tsp Chilli Powder  powder
2 Tomatoes
1/4 tsp  Pepper powder

Salt to Taste

Coriander leaves

Cooking Method

Step 1)
Heat oil in a pan and add cumin seeds, then add finely chopped onions , required salt and saute it for a couple of minutes. Once the onions turns translucent add green chilies, turmeric powder, chili powder and mix well.

Step 2) Followed by the masalas, add finely chopped tomatoes and cook for 5-6 minutes.

Step 3) In the meanwhile break open the eggs to a mixing bowl, add a pinch of salt and beat it nicely. You can also add the eggs directly to the mixture if you prefer.

Step 4) Once the tomatoes are nice and soft add the beaten eggs and cook on a low - medium heat stirring continuously , scraping the edges frequently .You can stop at any point you like, I prefer it very dry so i have cooked the eggs thoroughly .

Step 5) Once the eggs are done add some freshly ground pepper and some finely chopped coriander leaves , mix it once and turn off the heat.

That's it our egg Bhurji is ready to be served. You can serve this with bread, Chapathi or rice.


  • We can also use Pav Bhaji masala instead of garam masala powder. 
  • You can also experiment by adding ginger garlic paste if you prefer.
  • we can also add capsicum at the end.
  • We can also make the same recipe without adding tomatoes.

Egg Bhurji is nothing but scrambled eggs cooked with onion tomatoes and well seasoned with masalas. It is also known as muttai podimas or egg podimas in Tamil.This recipe is quite easy to make and tastes delicious.

    For Egg Burji Recipe:
  • 2 tbsp Oil
  • 1/2 tsp Cumin Seeds
  • 2 large Onions
  • 2 Green Chilies
  • 1/4 tsp Turmeric powder

    2. Saute onion with the masalas and add tomatoes and cook for 5-6 minutes
    3. Beat eggs and add it to the onion tomato mixture and cook until fully done
    4. Finally add pepper powder and garnish with coriander leaves
    5. Egg Bhurji Recipe is ready to be served
