Vendakkai Puli Kulambu

         Vendakkai Puli Kulambu is a traditional kulambu recipe from the heart of Tamil Nadu. It is also called Kara Kulambu because of its spicy and tangy taste. Puli kulambu can be made by adding Fenugreek (vendhayam), Garlic (Poondu ) , Brinjal (Kathrikai), Turkey berry (sundakkai) but in this recipe we are going to add vendakkai (lady's finger) to this spicy kuzhambu. When the kulambu is ready the vendakkai become so filled with taste that people who normally don't like this vegetable will now fall in love with it.

Tips for perfect kulambu :-        
1)In this puli kulambu recipe we are going to use shallots because they add a unique taste to our curry. 
2)Also Gingelly oil must be used in the recipe to obtain the traditional taste. Sunflower oil / Canola oil will not add that kick to our kulambu.
3)The Kulambu Podi used in this recipe is a secret recipe from my mother-in-law which I will be sharing in this blog.

Quantity INGREDIENTS
100 Okra / Vendakkai /  Ladyfinger / à®µெண்டைக்காய்
2 Tbsp Gingelly Oil
1/4 tsp Mustard seeds
1/4 tsp Fenugreek seeds
few  Curry leaves
7-8 Shallots
1 Tomato
1 lemon sized Tamarind
1 Tbsp Kulambu powder

For Coconut Base
1/2 cupGrated coconut
1 Garlic clove
2 Shallots
1/2 tsp Cumin seeds

Water

Salt to Taste

Cooking Method


Step 1) Cut the okra into pieces of 1 inch in size and saute them in oil (Gingelly oil)  for 4-5 minutes or until it gets a nice golden color on the outside and keep it aside.Roasting them removes the stickiness from the Okra.

Step 2) In the same oil temper with mustard seeds, fenugreek seeds and some curry leaves. Immediately after adding the tempering ingredients add the shallots(since the pan is already hot fenugreek will turn brown soon) and saute for a couple of minutes.Once the shallots are soft and golden add 1 tbsp of Kulambu powder (Curry powder) or you can also use sambar powder.

Step 3) Then add 1 chopped tomato and cook until everything turns into a paste.Once the shallots are soft and golden add 1 tbsp of Kulambu powder (Curry powder) and mix it and add tamarind juice (soak lemon size tamarind in water for sometime and then extract the juice) ,add enough water , required salt

Step 4)  and also add the roasted Okra.Cook for few minutes until the gravy boils and thickens a bit.

Step 5) Meanwhile to make coconut base in a blender add grated coconut, garlic, shallots ,cumin seeds and grind it to a coarse paste.Add some water if required while grinding

Step 6) Once the gravy thickens a bit add the coconut mixture and cook for another 4-5 minutes or until the oil separates at the sides.
