Prawns Ghee Roast

Written By Angela Steffi on Wednesday, September 21, 2016 | 11:54:00 PM

Prawns Ghee Roast is an awesome side which goes excellent with Rice, Chapathi, Roti and also goes very well with Breads. Prawns are the delicacies of the sea world, they have an exceptional taste while having lower calories. This prawns roast is a treat for sea food lovers like me.I make this very often because this recipe is quite easy to make and we do not need to worry about any extra sides. This recipe tastes better than the one which we get at the restaurants.
Since Prawns are very delicate we need to cook them separately,If we cook the prawns with the masalas then the prawns will be over cooked and will turn rubbery and at the same time if we cook for less time then the masalas will stay raw, so to overcome this problems we are going to cook both the prawns and masalas separately.

Serving Size          :  4 people

Cooking Time       : 15-20 mins

Difficulty: Spice Level:

1/2 kg Prawns / Shrimp (Deveined)

To Cook Prawns
1/4 tspTurmeric powder
some Salt

To dry roast
8Kashmiri Chilies
1 tsp Coriander Seeds
1 tsp cumin seeds
1 tsp Fennel Seeds
1 tsp Pepper Corns
4 Dry red chilies

To make masala for prawns
1"  Piece Ginger
3 Cloves of Garlic
1 Tbsp Lemon juice
3 Tbsp Water

To make Chicken Ghee Roast
1/4 cup Ghee / Clarified butter
1(200g) Onion (finely chopped)
1/4 cup Yogurt / Curd

Curry Leaves for Garnishing

Salt to taste

Cooking Method

Step 1) First we need to cook the prawns separately to get rid all the moisture,so cook the prawns with some salt and turmeric powder without adding any water or oil for some time until all the water content from the prawns is gone

Step 2) To make masala for the prawns in a pan dry roast Kashmiri Chilies for a couple of minutes(Kashmiri chilies adds a nice color to the recipe and at the same time they are less spicy,if you don't have kashmiri chilies then replace it with 4 regular dried chilies). Then in the same pan roast Coriander seeds, Pepper corns, Fennel seeds, Cumin Seeds and dry red chilies until the color changes a bit.

Step 3) Transfer all the ingredients to a blender and along with this add Ginger, Garlic, Lemon Juice, some water and grind it to a smooth paste

Step 4) To make Prawns Ghee roast melt some Ghee, add finely chopped onions some salt and cook until the onions are nice and translucent. Then add the ground masala paste, Yogurt and mix it well with the onions.Cook the masala for 8-10 minutes or until the raw smell is completely gone.

Step 5) Then add some curry leaves and also add the cooked prawns.Mix it well with the masala mixture and cook for another 4-5 minutes.Since the prawns are already cooked we don't have to cook for a long time.
