Mushroom Biryani Recipe

Mushroom biryani ( known as Kaalan Biryani in Tamil) is one of the delicacies of vegetarian cooking and this mushroom biryani recipe is one of my favorite recipes. Mushrooms are exotic ingredients of cooking, they have little flavor on their own but they will absorb the flavor of all the seasoning applied to them. Mushrooms are rich in nutrients and are a good source of anti oxidants while having lower calories.I am a big big fan of biryani,to be frank i have never tried mushroom biryani for the past 22 years but accidentally it happened on one fine day at my friends wedding,I tasted this awesome mushroom biryani and I fell in love with it from then on I make this delicious Biryani very often.Now I make Chicken BiryaniMutton Biryani, Mushroom Biryani, Veg Biryani ,Prawn Biryani, Fish Biryani in a sequence every weekend.

500g Mushroom / Kaalan
2 Tbsp Ghee / Clarified Butter
2 Tbsp Oil
2   Bay leaves
1 Cinnamon Stick
Star anise
3 Cardamom pods
3 Cloves
200g Onion (1 large)
100g Tomato (1 tomato)
1/2 tsp Fennel Seeds
1 Tbsp Ginger Garlic paste
3 Green Chilies
1/2 tsp Turmeric powder
1 tsp Garam Masala powder
2 tsp Red Chili powder
1/4 cupYogurt / Curd
Handfull coriander and Mint leaves
2 cups Basmati rice
3 cups Water

Salt to Taste

Cooking Method

Step 1) First step is to clean the mushroom, clean it with a paper towel or a cloth,never clean then in water or soak it in water,if you soak it in water then the mushrooms will become soggy so use a paper towel to clean the dirt. Once cleaned cut then into pieces of quarter inch size.


Step 2) Heat ghee and oil.once the oil is hot add the whole spices bay leaves, cinnamon stick, star anise, cardamom and cloves.Then add sliced onion,some salt to speed up the cooking process and saute it until the onions are golden


Step 3) once they are nice and golden add in the fennel seeds, Ginger Garlic paste, green chilies, Turmeric powder, Garam masala powder and red chili powder give it a quick mix and then add tomato puree(from 1 tomato) or you can also add 1 thinly sliced tomato. If you don’t like the taste tomato then replace it with a tbsp. of lemon juice to get sour taste.


Step 4) Once it is thickened and the raw smell is gone at this stage add the cleaned mushrooms. Mix it well with the onion masala mixture .whenever you cook mushrooms it will release a lot of moisture so we need to remove that moisture completely. Now once the mushrooms are cooked add quarter cup of yogurt some mint leaves and some coriander leaves. Gently mix it gain


Step 5) Add water (the ratio of rice to water for Biryani is 1: 1.5)then add required salt, soaked basmati rice (soaked in water for 30 minutes) Mix it well..Cover and cook until all the water is absorbed and the rice is 100% cooked. 


Now I can smell the awesome flavor of our can see the rice is perfectly cooked .Enjoy this delicious Kaalan Biryani with Raita or Cauliflower Manchurian.
