| 2 bunch | Coriander leaves |
| 4 | Green Chilies |
| 1 inch | Ginger |
| For Coriander Rice | |
| 2 tbsp | Oil |
| 1/4 tsp mustard seeds, 1 tsp Urad dal , 1 tsp Chana dal | |
| 1 Cinnamon stick , 1 bay leaf, 2 cloves | |
| 2 | dry red chilies |
| 1 tbsp | Cashews or peanuts |
| 1 | Onion (medium size) |
| Salt to taste | |
| Juice of half lemon |
Cooking Method |
Step 1)
Wash and remove the thick stem of coriander leaves, add it to a blender along with green chilies and ginger. Grind it to a fine paste.
Step 2)
Heat oil is a pan and temper with mustard seeds, urad dal, chana dal, cinnamon stick, bay leaves , cloves and dry red chilies and few cahews.Then add sliced onion and saute until golden brown. Then add the ground coriander leaves and cook for a couple of minutes until dry, add required salt.
Step 3)
Once the mixture becomes slightly dry add the cooked rice and mix well until the rice is well coated with the coriander mixture,. finally squeeze in lemon juice and turn off the heat.
That's it our delicious coriander rice is ready to go into the tiffin box along with some potato varuval and vadagam.
