Ghee Rice Recipe / Nei Sadam

Ghee Rice is a simple yet delicious recipe which can be made under 30 minutes. This recipe is highly aromatic and flavorful because of the added ghee and whole spices. This Nei Sadam is very famous in Tamil Nadu and Kerala especially you can find this delicious recipe in most of the weddings in my Hometown Nagercoil. It requires only few basic ingredients , the individual grains of rice and the added nuts , fried onions makes this dish more appealing and appetizing. 
You can serve this with Paneer gravy, Mushroom Gravy and also goes excellent with Chicken Gravy, Mutton Gravy

Ghee-Rice-Recipe

Quantity Ingredients for Ghee Rice Recipe
For Topping
4 tbsp  Ghee / Clarified Butter
15-20 Cashews
3 tbspRaisins
Onion

For Ghee Rice

1 Cinnamon stick, 2 Bay leaves

1 Star anise, 3 Cardamom, 4 Cloves
1 tbsp  Crushed Ginger
3 Green Chilies 
1 Onion
2 cup Basmati Rice
3 cup Water
someCoriander Leaves

Salt to Taste


Cooking Method


Step 1) Melt ghee in a pan and roast cashews , once they turn golden add raisins and saute until the raisins is ballooned. Take it off from the pan and keep it aside.
Now in the same pan saute onion until it turns golden brown. Once nicely browned take it out and keep it aside.(be careful while sauteing do not burn the onions , it may taste bitter)



Step 2) Again in the same ghee (or you can add more if you prefer) add the whole spices - Cinnamon, cardamom, bay leaves, cloves and star anise.
Then add crushed Ginger, green chilies and saute it until raw smell of ginger is gone.
Then add Onion and saute until translucent.


Step 3) Then add the soaked basmati rice, I have used 2 cups of basmati rice washed and soaked in water for 20 minutes.Mix it well with the ghee and cook for 2 minutes. Then add water and required salt . Cover and cook until all the water is absorbed by the rice or until the rice is 100% done.


Step 4) Finally add ghee for more flavor and also add the roasted nuts, fried onions and some coriander or mint leaves on the top and turn off the heat.

Ingredients:
  • For Topping

Instructions:

  1. Roast cashews and raisins
  2. Saute Onion until golden brown
  3. Roast the spices and saute onion until translucent
  4. Add rice and adequate water and cook it
  5. Add the roasted nuts , fried onions and coriander leaves
  6. Our Ghee Rice isready to be served hot.
