Idiyappam also known as string hoppers is a famous south Indian recipe made with rice flour, this is a simple recipe which can be made under 10 minutes. This can be served in several ways according to your preference - Sweet, Savory, drenched in Kurma, coconut milk and my favorite is with chicken Curry and Muttai Kulambu. It can be served as as Breakfast or a light dinner. Lets get started.

1.5 cup | Idiyappam Flour (or roasted raw rice flour) |

Cooking Method |
Step 1) Into a sauce pan heat water and bring water to a nice rolling boil. Adding hot water is very important in this recipe as it makes the Idiyappam stay softer.
Step 2) In a mixing bowl add rice flour and add required salt to it. Mix it nicely and then add oil and gradually add boiling water and mix well with a spoon. Do not add too much of water,the dough should be little thick and hard. Once the dough cools slightly mix it nicely with hands.
Grease the Idli plate with some oil and press the dough, while pressing make sure the strings falls straight without breaking, if it breaks often then the dough is not in right consistency.
That's it our Idiyappam is ready to be served. We can serve with thick coconut milk and sugar, Veg Kurma , if you are fond of non veg then Chicken Curry goes excellent with this recipe. Happy Cooking !!!
