Kuska / Plain Biryani is a simple and easy rice recipe made without adding any meat or vegetables. Rice is flavored with whole spices and masalas which adds unique taste to the recipe. This recipe can be made in few minutes , it is a perfect lunch box recipe and a go to recipe without using more any meat. It has a same flavorful rice as biryani and its far easier to make.Onion Raitha, veg Salna or chicken Salna goes excellent with this recipe. Lets get started.

2 tbsp | Oil |
2 tbsp | Ghee |
2 Bay leaf, 1 cinnamon stick, 2 star anise , | |
3 cardamom, 4 cloves | |
1 tsp | Fennel seeds |
1 inch | Ginger |
4 cloves | Garlic |
2 | Green chilies |
2 | Onions |
2 | Tomatoes |
1/4 cup | Curd / Yogurt |
1/2 tsp | Turmeric Powder |
1 tsp | Garam Masala powder |
1 tsp | Red Chilli Powder |
2 cup | Basmati Rice |
3 cup | Water |
Mint Leaves | |
Coriander leaves | |
Salt to taste | |
Cooking Method |
Step 1) in a mortar and pestle or in a blender add ginger , Garlic, green chilies and grind it well.
Then add Onions , pinch of salt and saute it until the onions turns golden.
Step 3) Once the onions turns golden add the ginger garlic and green chili paste and cook until the raw smell is gone.
Then add the masalas - Turmeric powder, chili powder and garam masala powder. Cook for a minute.
Step 5) Then add Basmati rice (washed and soaked in water for 30 minutes), Water , Mint and Coriander leaves. Finally add salt and mix well. while taste testing the water should be little salty.
Ratio of rice to water is 1:1.5 so for 2 cups of rice I have used 3 cups of water.
Cover and cook it for 1 whistle on a medium heat or until the rice is well done. That's it our easy and simple Kuska Biryani is ready to be enjoyed with Onion Raitha, veg Salna or chicken Salna.

ReplyDeleteNow to this add tomato and cook until oil separates. Now add bell peppers / Capsicum and cook for a couple of vidmate minutes.
