|Quantity||Ingredients for Kuska Biryani Recipe|
|2 Bay leaf, 1 cinnamon stick, 2 star anise ,|
|3 cardamom, 4 cloves|
|1 tsp||Fennel seeds|
|1/4 cup||Curd / Yogurt|
|1/2 tsp||Turmeric Powder|
|1 tsp||Garam Masala powder|
|1 tsp||Red Chilli Powder|
|2 cup||Basmati Rice|
|Salt to taste|
Step 1) in a mortar and pestle or in a blender add ginger , Garlic, green chilies and grind it well.
Then add Onions , pinch of salt and saute it until the onions turns golden.
Step 5) Then add Basmati rice (washed and soaked in water for 30 minutes), Water , Mint and Coriander leaves. Finally add salt and mix well. while taste testing the water should be little salty.
Ratio of rice to water is 1:1.5 so for 2 cups of rice I have used 3 cups of water.
Cover and cook it for 1 whistle on a medium heat or until the rice is well done. That's it our easy and simple Kuska Biryani is ready to be enjoyed with Onion Raitha, veg Salna or chicken Salna.
