Mutton Rogan Josh Recipe

Mutton Rogan Josh is a tasty recipe from Kashmir which is not only popular in India but all around the world,Traditionally this recipe is made with no Onions, tomatoes and yogurt, but I have added yogurt to give some base and sourness for the curry.  I have never heard about this recipe when I was in India (I feel bad for missing this delicious recipe for 25 years) , Here in Dallas it is very famous and tried it in one of the Indian Restaurants, immediately felt in love with this flavorful curry. Searched for this recipe online, but couldn't find the perfect ratio, finally I got this recipe for one of my North Indian Friends "Mamatha" who lives in the same community , the first attempt was a huge success and following the same till-date. My husband really loves this Mutton Rogan Josh and we have this as a side for Naan or Chapathi.
This curry is highly aromatic and very flavorful due to the added spices in which the meat is cooked to perfection in a low flame for more than 1 hour, so the meat stays tender and falls apart from the bone. Without further delays lets start the preparation.

Quantity Ingredients for Mutton Rogan Josh Recipe
1/2 kg Mutton (with bones)
4 tbsp Ghee / Clarified Butter

1 Cinnamon Stick , 2 black cardamom, 4 green Cardamom , 1 mace 

1/2 tsp cumin seeds, 1/2 tsp pepper corns
1/2 tsp Turmeric powder
1/2 tsp Hing / Asafoetida
2 tbsp Kashmiri Chili powder or 1 tbsp regular chili powder
1 tsp Dry Ginger powder
2 tsp Fennel seed powder
1/2 cupThick Yogurt / Curd

Salt to taste

Required Water

For grinding 
1 tsp Cumin Seeds
3 Green Cardamom
fewSaffron strands

Cooking Method


Step 1) Melt ghee or oil in a pan and add the whole spices - Cinnamon stick, black cardamom, Green Cardamom, mace, cumin seeds and pepper corns. Give it a stir and then add the mutton pieces. You should hear the Hushhhhhhhhhhhh..... sound when you place the mutton pieces to get nice color on the outside.


Step 2) Once the mutton develop some nice color on the outside ( after a couple of minutes) add first set of masalas - Turmeric powder, Hing, Kashmiri red chili powder to impart nice color and finally required salt. after adding all the ingredients mix it nicely and let it cook for 10 minutes.


Step 3) After 10 minutes add the second set of ingredients - Dry Ginger powder, Fennel Seeds powder and thick Yogurt . Mix it nicely and then add enough water cover and cook until the mutton is fully done. Mutton Takes somewhere from 1 hour to 1 hr 20 minutes to get completely cooked.


Step 4) In the meanwhile crush some cumin seeds, cardamom and saffron and keep it aside. Adding these spices at the end enhances the flavor of the recipe.


Step 5) After 1 hour add the powdered spices and cook for another 5 minutes or until the mutton is fully done. Once you see the meat falling off the bones turn off the heat.

Instructions:

  1. Melt ghee and add the whole spices
  2. Add the mutton and cook for 2 minutes
  3. Add the masalas ,required salt ,Water and cook until the mutton is fully done
  4. Once the mutton is cooked completely turn off the heat
  5. Our Mutton Rogan Josh is ready to be served hot with Naan or chapathi.

  1. Hi Steffi, I tried this recipe for mutton rogan josh and followed your instructions. The dish tasted great but the mutton was chewy and bit tough. What can i do to fix this? Thanks !

    1. Hi I am sorry about the results, I think the meat has been over cooked, if we cook for a long time then it turns a little hard and chewy.
      I would prefer a pressure cooker to keep the mutton tender. After adding all the ingredients add water and pressure cook for 4 whistles on medium heat.

    2. Mutton when over cooked disintegrates. It is chicken which gets tough on overcooking, not mutton. With mutton if it is dry, then chances are that it is a quality issue. While buying make sure it is not wrinkled and is fresh and vibrant. If wrinkled chances are it is old and you will end up with a chewy and tough mutton dish. Sourcing very important. This was the issue with me as well, so now visit the wholesale market for the best quality fresh mutton. Hope this helps. Also consider marinating it with some curd. For me this has helped bring really good satisfying meals.
