Egg Noodles Recipe

I am a great fan of Noodles, when I stayed in Chennai we have lots of small shops "thalluvandi kadai" which sells this delicious noodles, no matter how hard we try to resist our-self, we couldn't control over-self from eating this delicious chinese noodles. Even now when I thick of it I drool😋. Crispy sauted vegetables and the sauces adds more life and taste the recipe. Even-though we have lots of variation my favorite always is egg noodles. Lets see how to make this delicious egg noodles recipe.

Quantity Ingredients for Noodles  Recipe
1 pack Hakka Noodles 
1 tbsp Oil (for coating noodles after cooking)
3 large Eggs
2 tbsp Oil
1 tbsp Finely chopped Ginger
1 tbsp Finely chopped Garlic
1/2  Onion (Thinly sliced)
1 Carrot(thinly sliced)
1/4  Cabbage
1 tbsp Chilli sauce
1 tbsp Tomato sauce / Tomato ketchup
1 tbsp Soy sauce
1 tbsp Vinegar 
1/2 tsp  Pepper powder
required Salt

Spring Onions

Cooking Method

Step 1) Cook noodles according to the instructions (do not overcook , it may turn too soft and sticky). Drain the water and drizzle some oil and mix well. Oil prevents the noodles from sticking to one another. 

Step 2) Heat oil and add eggs, season with salt and pepper .Scramble the eggs and keep it aside

Step 3) Now again in the same pan heat some oil and add finely chopped ginger and finely chopped garlic. Then add sliced onion and saute it for a couple of minutes until the onions turns translucent.

Step 4) Once the onions are translucent add finely chopped or grated vegetables - Carrots, beans, capsicum and cook until the veggies are 80% done.Do not overcook the vegetables we need to maintain some texture of the veggies.
Then add the sauces - Chilli sauce, Tomato ketchup, Soy sauce and vinegar.

Step 4) Add the cooked noodles and mix it well with the vegetables and the sauces. Finally add the scrambled eggs, salt , pepper and a handful of spring onions and turn off the heat.


That's it our delicious egg noodles is ready to be served hot. You can add a little bit of ajinomoto or MSG to enhance the taste, but without that also our noodles taste wonderful. I never add MSG to my recipes. This recipe tastes heavenly and really simple to make. please do try the recipe at home and share your feedback. happy Cooking !!!
