Rava Kesari is a classic recipe of Tamil Nadu made with rava / Sooji and sugar. This is the only recipe which goes excellent with breakfast, lunch ,can be had as an evening snack and also goes with dinner. This rava kesari is often served in all the weddings and functions , this is the first sweet recipe I made in my cooking career. This is very simple and easy to make and I guarantee you that this recipe will never fail on you.
We can make lot of variations in this recipe, we can add pineapple chunks to it to make Pineapple kesari, mangoes to make mango kesari, apples to make apple kesari and the combinations are endless....

1 cup | Sooji / Rava / Semolina |
1 cup | Sugar |
4 -5 tbsp | Ghee |
15 | Cashew nuts |
2 tbsp | Raisins |
1 pinch | Orange food color (optional) |
2 cups | Water (or 1 cup water + 1 cup milk) |
Cooking Method |
Step 1) Add some Ghee in a pan and roast cashews first,once it turn golden add the raisins and roast until they are ballooned, do not burn them (they will taste bitter if burnt).
Transfer this to a plate and then add 1 more tbsp of ghee to the pan and then add the sooji and roast it nicely until you get a nice aroma and golden color.It will take around 8-10 minutes.when it obtains golden color remove the pan from heat and immediately transfer it to a plate to prevent browning.
Step 2) And again in the same pan add water. For this recipe I have taken two cups of water for 1 cup of rawa. However if you prefer a more creamy and richer kesari you can use 1 cup of water and 1 cup of milk for every cup of rawa. or you can use 3 cups of water for little soft kesari.
Once the water comes to a boil gradually add the roasted rava and and keep stirring to prevent lumps once you get a lump free mixture cook until all the water is absorbed by the rawa
Step 3) Once all the water has been absorbed by the rava/ sooji gradually add Sugar and mix well.The ratio of Rava to sugar can be adjusted according to your sweet preference, A ratio of 1:1 ie 1 cup of sugar for 1 cup of rawa is preferred by most people. However if you prefer a moderate sweetness you can use ¾ cup of sugar per cup of rawa. You can adjust the sweetness somewhere from ¾ cup to 2 cups of sugar for every 1 cup of rava / Sooji.
Add food color if you prefer , dissolve some color powder in water and then add to get even distribution.
