Badusha Recipe

Badusha is a very famous sweet distributed during weddings and festivals all over India, it is also Known as Balushahi in some parts of India . I am big fan of this sweet and I always wonder how they actually prepare this delicious sweet which has got correct amount of sweetness without overdosing . Whenever I go to sweet stalls the first sweet I order would be Badusha and Kaju Katli because I thought we can never make this at home and I never made any attempt. Finally when I moved here to Dallas I really missed Badusha and after 2 -3 times of trial and error I finally got the perfect ratio for making this sweet.It has got a crispy texture on the outside , flaky layer at the inside so that the syrup can penetrate more efficiently and remains juicy at the center.

Quantity Ingredients for Badusha Recipe
For Dough
1.5cup Maida / All Purpose flour
1/2 tsp Baking Powder
2 tbspYogurt / Curd
1/4 cup Ghee / Clarified Butter
1/2 tsp Sugar
3 -4 tbsp Milk

For Sugar Syrup
1 Cup Sugar
1/2 Cup Water
2 Cardamom
10 Saffron
few drops  lemon juice

Cooking Method


Step 1 ) Dough for Badusha:
In a bowl add Maida, baking powder and mix well.Then add curd, ghee, sugar and milk. Combine everything nicely to form a dough.

  • Do not add too much of  milk
  • Do not over knead the dough
  • Dough should not be soft like chapathi dough, it should be flaky
After mixing cover it with a cloth and keep it aside for 10 - 15 minutes


Step 2) Preparing Sugar Syrup:
Dissolve sugar in water and bring it to one sting consistency, the sugar syrup should not pass one string , if is passes one string consistency then the syrup will not penetrate more efficiently into the badusha. 


Once the syrup reaches one string, add cardamom and few strands of saffron (saffron is optional) and also add few drops of lemon juice to prevent sugar crystallization.Turn off the heat and keep it aside.


Step 3)
Now after 15 minutes take a small portion of the dough and make it into balls, you may see very few cracks on the outside that is perfectly normal, if there are more cracks then the badushas may break while frying, in that case we need to adjust the consistency by adding little more milk.Then make a small pit at the center using your index finger.


Step 4) Frying the Badusha:
Fry the badhusha on a medium heat , oil should not be very hot. If it is hot then the badushas will develop color soon and it will stay raw at the center. In few minutes the badushas will lighten and float on the oil, flip it to the other side and let it develop uniform  golden color on all the sides. 
Drain the excess oil and continue with the rest of the batches.


Step 5) Soaking :
After frying drop it into the sugar syrup, if the syrup is cooled completely then heat it for a minute before adding the badusha. Cover the badushas in sugar syrup and let it soak for minimum 3 -4 minutes.


Finally Garnish it with your favorite nuts on the top.

Instructions:

  1. Mix maida, yogurt, ghee, baking powder, milk and make a rough dough
  2. let it rest for 10 -15 minutes
  3. Make Sugar Syrup and flavor
  4. make small balls and fry the badusha over medium heat
  5. dunk it into the sugar syrup for 3 - 4 minutes
  6. Our Delicious Badusha is ready to be enjoyed
