Sponge Cake Recipe

Sponge cake is the basic and building block for all other fancy and layer cakes in the world. A perfect sponge makes any fancy cakes taste much better. A perfect sponge cake should be soft, fluffy and should be spongy. I always wanted to make a perfect sponge cake recipe to decorate other cakes , after lot of trial and error I finally got the prefect recipe for making sponge cake. This cake is really easy to make and tastes wonderful. Once you try this cake you will never buy cake from stores because we can make this easy sponge cake in a cooker. Sponge Cake in Pressure cooker is really easy to make and I have shared both pressure cooker method and oven method.

Serving Size           : 6 people 

Preparation Time  : 10 minutes

Cooking Time        : 35 - 40 minutes (Cooker)
                                : 28-  30 minutes (Oven)


Difficulty:
Quantity Ingredients for Sponge Cake Recipe
1 cup All purpose flour /  Maida ( 130g)
Eggs
1/4 cup Butter (55g) 
3/4 cup  Sugar (150g) 
1/4 cup Milk ( 60 ml) 
1 tbsp Vanilla Extract
1 tsp Baking Powder
1/4 tsp Salt

Cooking Method


Step 1) Temperature and Cooker setup:

Start by preheating the oven @ 350 F or 175 C.
Before preheating the cooker spread a layer of salt, then place a wire rack and a perforated plate on the top. Cover and preheat the Cooker for 15 minutes on a medium heat without placing the cooker weight.


Step 2) Separating Whites and Yolks:
Separate the egg whites and yolks in a separate bowl. We don't need any yolks in our whites, if there is any yolk left behind then it will prevent the egg whites from whipping up nicely. So make sure the whiles are clean without yolks.


Step 3) Whites:
Beat the egg whites until soft peaks are formed. It will take approximately 5 -6 minutes. Beating the egg whites gives nice texture and aeration to the cake. 


Step 4) Wet Ingredients:
Similarly beat the yolks until pale yellow , takes 3 - 4 minutes. Once done add the wet ingredients - Butter and sugar mix well and then add milk and vanilla extract. Mix it nicely.



Step 5) Dry Ingredients:
Next in a sifter add maida / all purpose flour , baking powder and salt, sift them together. Gently fold the flour into the egg mixture and make a smooth batter without any lumps. 




Step 6) Folding Whites with flour:
Now add the egg white mixture , 1/3 at a time and gently fold it into the flour mixture . Do not give lot of pressure, because the air trapped in the whiles helps the cake to stay fluffy and spongy. Do it very slowly and carefully. Similarly do it with the rest of the whites and fold to incorporate everything into the batter.


Step 7) Baking in Cooker:
Transfer the cake batter into a baking pan, I have use 6 inch baking pan- greased with butter and lined with parchment paper. Bake it for 35 - 40 minutes on a medium heat without placing the cooker weight.


Step 7) Baking in Oven:
Similarly I made one more batch to bake it in the oven at 350 F for 28 - 30 min

Notes:

  • Beating whites separately helps in getting soft and spongy cakes
  • Do not take it out of the mold immediately after baking, leave it for 10 -15 minutes to rest and then transfer the cake to a wire rack and let cool completely.
  • Baking time may vary depending on the size of baking pan so make
  • we can reuse the salt for future baking purpose.

When it comes to baking may of us might not have oven at home, so I am sharing a simple and easy spong cake recipe which can be made in pressure cooker without any fuss. This cake comes out perfectly baked and it stays soft spongy and fluffy.

Ingredients:

  • 1 cup All purpose flour
  • 4 Eggs
  • 1/4 cup Butter
  • 3/4 cup Sugar
  • 1/4 cup Milk
  • 1 tbsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1/4 tsp Salt
  • Salt to taste
Instructions:
  1. Preheat the cooker and the oven
  2. separate egg whites and yolks,beat whites and keep aside
  3. Beat yolks and add the wet ingredients
  4. fold flour into the egg mixture and add the beaten egg whites as well
  5. Bake for 35 - 40 minutes in the pressure cooker

    1. Keeping the lid on is sufficient no need to place the cooker weight (whistle)

    1. You don't have to remove the casket. Since we are not applying pressure the presence or absence of the rubber casket makes no difference.

  7. I baked in cooker sterday but while beating egg whites alone it got watery below dono y... Thn cake came out soft but there was a lot of egg smell thn I have a doubt what happens if we serve still cake is hot

  13. We tried your recipe for sponge cake in cooler. The salt used in cooler spoiled the cake. The top layer of cake had a coating of salt. We literally cut off the top portion of cake that was salty.

    1. Yes it happens at times.. depends on the oven temperature and the cake tin size. You can bake for additional 10-12 min to get it fully done.

    I tried this recipe today . Though the Cake came out well , there was still a smell of the egg . Any reasons why ? And also I kept on oven and the time taken to cook was around 40 minutes . Pls let me know where I went wrong . Thank you ,
