Vegetable Korma Recipe / South Indian Mixed Veg Kurma for Chapathi

Vegetable Korma is an excellent companion for Roti and Chapathi. This Veg Kurma is easy to make and tastes delicious.Vegetable Korma adds all nutrients and Vitamin for our daily diet so it is tasty as well as healthy.You can add any vegetables of your choice. This Veg Korma can be made in 2 different ways.The traditional south Indian method is to add coconut, however if you dont like the taste of coconut replace it with boiled and mashed up potatoes to thicken the gravy. This recipe is similar to the one which we get at the hotels - Hotel Style Veg Kurma especially Saravana Bhavan Style.

Quantity INGREDIENTS
1 Tbsp Oil
Bay Leaves
1 inch Cinnamon stick
cardamom pods
4 cloves
1 tsp fennel seeds
1(200g)Onion
1 Tbsp Ginger Garlic paste
1/2 tsp  Turmeric powder
1 tsp  Cumin powder
1 tbsp  Coriander powder
1 tbsp Chili powder
Tomatoes

Vegetables ( Carrots, Beans, Peas, Cauliflower , Potatoes)

Coriander leaves for Garnishing

Salt to Taste

For Coconut Paste (Base)
1/2 cup Grated Coconut
1 Tbsp Roasted Channa Dal
1 tsp poppy Seeds
5Cashew nuts
1 Tbsp Water


Cooking Method


Step 1) In a pan heat some oil, once the oil is hot add bay leaves, cinnamon, cardamom, cloves and a tsp of fennel seeds (I love to add whole fennel seeds,You can also use fennel powder (use 1/2 tsp of fennel powder)
Then add chopped onions, salt and saute until the onions are golden.

Step 2) Then add some Ginger Garlic paste and mix it.After the raw smell of ginger garlic paste is gone add turmeric powder, coriander powder, cumin powder and Chili powder (1 tbsp will be less spicy,you can adjust according to your spice preference).But the one which we get in the Hotel will be less spicy.

Step 3) Then add 2 chopped tomato and cook until the tomatoes turns soft. Followed by tomatoes add the vegetables of your choice (I have added Carrots, Cauliflower, Peas, Beans, Potatoes and Cauliflower).Add enough water and cook until the vegetables are 50 % done

Step 4) Meanwhile lets make a coconut base for the Veg Korma. In a blender add 1/2 cup of grated coconut, Roasted channa dal, poppy seeds, cashews and grind it to a smooth paste along with some water.
If you don't like the taste of coconut add 1 boiled and mashed potato to thicken the gravy.

Step 5) Ones the veggies are half done add the coconut paste, add salt if required and cook until the vegetables are 100 % cooked.

Step 6) Finally add chopped coriander leaves and turn off the heat.Coriander leaves gives good flavor and aroma to the veg Kuruma.

Vegetable Korma / Veg Kurma is a simple and easy gravy which pairs excellently with chapathi / naan. This kurma also includes all the goodness of vegetables and this recipe is based on the Saravana Bhavan Veg Kurma which is a popular all over India. I have added coconut to this recipe to provide a creamy base.

Ingredients:
  • For Vegetable Kurma:
  • 1 Tbsp Oil
  • 1 inch Cinnamon stick
  • 3 cardamom pods
  • 4 cloves
  • 1 tsp fennel seeds
  • 1(200g) Onion
  • 1 Tbsp Ginger Garlic paste
  • 1 Tomato
  • 1 Tbsp Oil
  • Vegetables ( Carrots, Beans, Peas, Cauliflower , Potatoes)
  • Coriander leaves for Garnishing
  • Salt to Taste
  • For Coconut Base:

Instructions:
  1. Saute onions with whole garam masala.
  2. Add vegetables of your choice and season them.
  3. When the vegetables are 70% cooked add the coconut paste.
  4. Garnish and serve it hot with chapathi/ naan.
