Chicken Cutlets / Chicken Cutlets Indian Style is my favorite snack from my Childhood. My mom use to make this yummy chicken patties very often.I love homemade cutlets than store bought ones because of its freshness and taste. By following some tips we can make crispy chicken cutlets. This recipe make about 15 cutlets which is enough for a family of 4-5 people.
This hot and spicy chicken cutlets with a cup of hot coffee tastes heavenly. There are two methods to make this chicken cutlet first method is to cook chicken in water separately with some salt then shred the chicken and combining everything. But I prefer the second method (which I have shared in this page) to get a better taste and crispness. This Chicken Cutlets can be used as a stuffing inside many dishes,even in buns to make chicken burger.It is a great party appetizer as well. This chicken patties are crunchy crispy and are delicious too. You can make veg cutlets, paneer cutlets and even egg cutlets, just replace the chicken with cooked veggies , paneer or boiled eggs.

500 g | Boneless chicken pieces |
1 tbsp | Oil |
1(200 g) | Onion(finely Chopped) |
1 tbsp | Ginger Garlic Paste |
2 tbsp | Chili powder |
1/2 tsp | Turmeric powder |
1 tsp | Garam masala powder |
1/2 tsp | pepper powder |
salt to taste | |
2 | boiled potatoes |
handful | Coriander leaves |
2 | Eggs (season with salt and pepper) |
1 cup | bread crumbs (I have used Italian bread crumbs) |
4 Tbsp | Oil for shallow frying |
Cooking Method |
Step 1) Clean the boneless chicken pieces and blot it well with a paper towel to remove excess moisture from the chicken .Chicken should be dry for this recipe.Mince the chicken in a blender and keep it aside.
Step 2) To make chicken Cutlet heat 1 tbsp oil in a pan and add the finely chopped onions and some salt.Once the onions are golden add the masalas Ginger Garlic Paste , Chili powder, turmeric powder, garam masala powder and mix it once
Step 3) Add the minced Chicken Pieces add some salt and pepper, and mix it well with the Onion masala mixture and cook it for few minutes until the chicken is fully cooked.The mixture should be dry
Step 4) Once the chicken is well done turn of the heat and allow the mixture to cool .Then transfer the cooked chicken into a mixing jar and add 2 boiled potatoes (mash the potatoes well) and also add a handful of coriander leaves and combine everything together.you should be able to hold shape when rolled into balls
Step 6) Now to coat the cutlets break 2 eggs add some salt and pepper to season and beat it well.
We also need some bread crumbs.I have used Italian Bread crumbs (plain bread crumbs will also taste good) Now everything is set.Dip the cutlets in beaten eggs and then roll it into breadcrumbs make sure that all the sides are nicely coated.Then tap it to remove any excess crumbs or this extra crumbs spoils the oil
Step 8) To keep the cutlets crispy
Place the cutlets on a wire rack . If you place it on paper towel to remove excess oil then the steam will be trapped under the food and the cutlets will turn soggy, so to keep the cutlets crisper place it on a cooling rack so that air can circulate underneath and the food will stay crispy for a long time.
Our Delicious Chicken Cutlets are ready to be enjoyed with Ketchup and hot Coffee!!!! Happy Cooking ....
