Mutton Curry Recipe

Mutton Curry is one such thing which brightens the weekend. Mutton brings with itself the exotic tantalizing taste which is very addictive. This tasty mutton curry with rice is something which I look forward to on weekends. This is an easy mutton curry recipe which is a lot simplified but still delivers the taste of traditional mutton curry.  The addition of freshly ground masala adds a lot of flavor to the mutton pieces.

Quantity INGREDIENTS
1 Kg Mutton / Lamb
1 tsp Cumin seeds
1 tsp fennel seeds
10 Dry Red Chilies
1 Tbsp coriander seeds
1/4 cup grated coconut
5-6 Cashews
2 Tbsp Oil
1,1,3 Bay leaf, Cinnamon Stick, Cloves
150gShallots (1 Cup)
Tomato
1 Tbsp Ginger Garlic paste
1/2 tsp Turmeric powder
Handfull coriander leaves

Water

Salt to Taste

Cooking Method


Step 1) To make fresh mutton masala dry roast coriander seeds, fennel, cumin seeds and dry red chilies for a couple of minutes on a medium heat.To get best results do not use store bought mutton masala powder.

Step 2) Transfer the roasted spices to a blender add cashews, coconut and grind it to a fine powder. You can also use this masala for making chicken curry.

Step 3) To make Mutton Curry heat oil in a cooker, whole spices (Bay leaf, cinnamon, cloves) and then add a cup of shallots (Shallots adds a unique taste to the recipe) You can also use onions.Add required salt and saute until the shallots are golden brown.

Step 4) Once the onions are browned add Ginger Garlic paste, Turmeric powder, and the freshly ground mutton masala (from step 1) and give it a quick stir.Then add 1 chopped tomato and cook for a few minutes or until everything turns into a paste.

Step 5) Add the mutton pieces and mix it well with the gravy.Add required water and salt. Cover and cook for 4-5 whistles on a medium heat or until the meat is soft and tender.

Step 6) You can see the oil oozing out.Finally add some chopped coriander leaves and it is ready to serve. Our Delicious Mutton Kulambu is ready.
