Besan Burfi is a festive sweet recipe of India distributed during festivals and functions. this recipe is made with just few ingredients like besan flour, sugar and ghee. It is quite simple and can be made under 20 minutes. Lets get started.

Quantity | Ingredients for making Besan Burfi recipe |

1 cup | Kadalai maavu / Chickpea flour(100g) |
1/2 cup | Ghee (100g) |
2 tbsp | chopped nuts |
few | Saffron strands |
For Sugar syrup | |
3/4 cup | Sugar |
1/2 cup | Water |
1/2 tsp | Cardamom powder |
Cooking Method |
Step 1) Into a sauce pan add sugar, water and cook until the sugar syrup reaches 1 string consistency. Turn off the heat and add cardamom powder and stir. Keep it aside.
Step 2) Now in a non stick pan melt ghee and add the besan flour (sift the flour before adding). Initially the mixture will be thick but soon it will become thin. Keep stirring the mixture on low heat for 8-10 minutes.
Step 3) Once the raw smell of the besan is gone add sugar syrup from step 1 and mix well on low heat for 2 minutes or less. Once the bubbles subsides and leaves the pan transfer it to a greased pan.Do not cook for a longer duration, it might turn hard.
Step 4) Add some chopped nuts, saffron(optional) and press it gently with a spoon and let it cool.
Step 5) Once cooled, cut it into desired shapes.
