Homemade Eggless Ice cream Recipe

Ice Cream is an awesome dessert loved by all ages of people. We can make ice cream in 3 methods using eggs, using custard powder and with cream and condensed milk. Since cream is not available at all stores on our state I am making this recipe with milk. Today I am going to make base with custard powder. Lets get started.



Quantity Ingredients for Ice Cream 
1 liter Full fat Milk (4 cups approx)
150 gram Sugar (3/4 cup) 
2 tbsp  Custard powder
2 tbsp Butter
1 tbsp Vanilla essence 

For Topping
1 tsp Ghee
3 tbsp broken Cashews
2 tsp Sugar

Cooking Method


Step 1) In a large heavy bottom pan add milk and cook it over medium heat until milk reduces to half, It takes approximately 45 minutes. Stir it in between to prevent the milk sticking to the bottom.


Step 2) Once the milk is reduced to half (approximately- don't need to be exact),  take a spoon (3 tbsp ) of hot milk and add it to custard powder, mix well and keep it aside. (do not add the custard powder directly into the pint, it doesn't dissolve properly.


Step 3) Now add 2 tbsp of butter and mix well, Reduce the heat to low and gradually add the custard mixture and keep stirring on low heat.


Step 4) Now add sugar and mix well. Turn on the heat to medium and let it cook for sometime on medium until bubbles appear. (takes approximately 7 minutes)


Step 5) Once it become thick and bubbles apprears turn off the heat and add vanilla extract and mix well.


Step 6) Pass it through a strainer , as you can see its clear without any solid particles. Allow it to cool completely. Once cooled keep it in an air tight container and freeze it for  3 to 4 hours.


Step 7) After 3 hours transfer the mixture to a blender and grind it smooth without any solids. Again freeze it for 3 hours and repeat the same for 3 more times.


Step 8) After beating for the 4th time melt ghee in a pan and add broken cashews , once the cashews turns golden add sugar and wait until sugar melts and changes its color. Allow the cashew sugar mixture to cool down and add it to the beaten ice cream and freeze it.

  4. The ice cream seems yummy. Ice Cream is my favourite dessert and I can have it anytime anywhere. One of the best ice cream flavour I had was very unique from others which is Indian Style Sweet Spicy Ice Cream. It is the ice cream brand served by CanAsian Ice Cream. You must try this ice cream for sure. I am sure you will forget other flavours.

  5. hi steffi ....thus is lavanya from chennai i am regularly watching ur many dishes n i have tried it came out really well...But today i have tried icream with milk n egg recipe but after pouring egg sugar mixing to milk n then heating process as u said all tht items gone waste ...all the things gone waste really i disappointed my kid also...really dont know wat to do i am really in searching of ur contact number to ask u reg this...can u help me ..will u see my msg immediately can i have ur contact num

  7. Thank you for sharing such an amazing recipe with us, no matter if is it summer or winter there is no one who can say no to ice creams. I always think of making by bysekf but the process takes to much tie and working with Management dissertation writers does have not an easy schedule so I always cancel the plan. Thankfully I got this post and definitely try this recipe.
