QuantityIngredients for Kuska Biryani Recipe
2 tbspOil
2 tbspGhee

2 Bay leaf, 1 cinnamon stick, 2 star anise ,

3 cardamom, 4 cloves
1 tspFennel seeds
1 inchGinger
4 clovesGarlic
Green chilies
2Onions
2Tomatoes
1/4 cupCurd / Yogurt
1/2 tsp Turmeric Powder
1 tsp  Garam Masala powder
1 tsp Red Chilli Powder
2 cup Basmati Rice
3 cupWater
Mint Leaves

Coriander leaves

Salt to taste

Cooking Method

Step 1) in a mortar and pestle or in a blender add ginger , Garlic, green chilies and grind it well.

Step 2) In a pressure cooker heat oil and ghee, then add the whole spices - bay leaves, cinnamon stick, cloves, cardamom, star anise and fennel seeds.
Then add Onions , pinch of salt and saute it until the onions turns golden.

Step 3) Once the onions turns golden add the ginger garlic and green chili paste and cook until the raw smell is gone.
Then add the masalas - Turmeric powder, chili powder and garam masala powder. Cook for a minute.

Step 4) Then add sliced tomatoes and cook until everything turns into a paste. Once the onions and tomatoes turns soft add yogurt and mix well. Yogurt is added to get little sour taste (we can also use lemon juice instead of yogurt)

Step 5) Then add Basmati rice (washed and soaked in water for 30 minutes), Water , Mint and Coriander leaves. Finally add salt and mix well. while taste testing the water should be little salty.
Ratio of rice to water is 1:1.5 so for 2 cups of rice I have used 3 cups of water.

Cover and cook it for 1 whistle on a medium heat or until the rice is well done. That's it our easy and simple Kuska Biryani is ready to be enjoyed with Onion Raitha, veg Salna or chicken Salna.
