Sambar Recipe

Sambar is a traditional recipe of south India.Any south Indian breakfast like Idli, Dosa, Pongal,Vada is incomplete without this delicious sambar.It is a blend of all tastes like Spicy, tangy, salt and and a little bit of sweet in it,Its quite easy to make  and you can add any vegetables of your choice.It add all the nutrients for our daily diet.The main ingredient for making sambar is Sambar powder.Homemade sambar powder tastes the best.

Sambar-Recipe

Serving Size           : 6-8 people

Preparation Time  : 15 minutes (for cooking Toor Dal)

Cooking Time        : 30 minutes

Quantity INGREDIENTS

For Tempering
1/4 tspMustard seeds
1/4 tsp Fenugreek seeds
2 Dry red Chilies 
few Curry leaves
1/4 tsp Turmeric powder
1/8 tsp Asafoetida / Hing
10-12 Shallots

For Sambar
1 Cup Toor Dal / Thuvaram Paruppu
2 Tbsp Sambar Powder
1 tsp Chili powder

Tamarind juice(lemon size tamarind soaked in water)
Vegetables (Carrots, Eggplant, Cucumber, Drumstick)
2 Tomatoes
1/4 tsp Jaggery / Vellam
2 TbspOil
requiredSalt
required water

Coriander leaves for Garnishing


Cooking Method


Step 1) Pressure cook the Toor dal with some water for 4-5 whistles and cook until the dal is fully cooked and turns mushy.Keep this aside.

Step 2) In a big pan heat oil and add mustard seeds, fenugreek seeds, dry red chilies, curry leaves to temper and then add turmeric powder and hing.mix it once and then add shallots (Shallots adds very good taste to the sambar). Then add the cut vegetables (I have added Drumstick, Brinjal, Cucumber, Carrots) also add 2 chopped tomatoes and give it a mix.

Step 3) Add Sambhar powder and chili powder after mixing it once add tamarind extract (soak a lemon size of tamarind in water for 10 -20 minutes and then extract the juice) also add enough water for sambar. Add required salt.Cover and cook until the vegetables are 80% done.

Step 4) Once the veggies are 80% done add the cooked Thoor dal a small piece of jaggery to get a balanced taste, mix it well.Again cover the lid and cook for 10 more minutes on a medium heat.

Step 5) Once all the veggies are fully cooked add some shopped coriander leaves to get an awesome flavor mix it again and turn off the heat.

Our Delicious South Indian style Sambar is ready to be Served.You can enjoyed this as a side for any breakfast recipes or with Rice .
