INGREDIENTS |

1.5 Cup |
Besan flour / Chickpea flour / Kadalai Maavu |
1 cup | Sugar |
1/2 cup |
Ghee / Clarified Butter
|
15-20 | Cashews |
3 | cardamom pods |
Cooking Method |
Step 1) First in a nonstick pan melt ghee / Clarified butter, once the ghee melts add in the besan flour and mix it well with the ghee.we have to start on a medium to low heat and keep stirring until it turns golden brown in color. If it is not nicely roasted then the flour leaves a raw smell to the laddoos so roast until you begin to smell the good aroma and the change in color.
Step 2) Initially the ghee will be absorbed by the besan and it will form small clumps but don’t worry when the besan is fully cooked the ghee will start oozing out and the mixture will attain a paste like consistency and another way of checking is by aroma, besan releases a nice aroma when it is fully cooked (It will take 8-10 minutes on a low-medium heat) now when the besan is fully cooked this is how it looks it might not look very firm at first but once the laddus dry up they will be a lot firmer
Now allow the mixture to cool slightly I am transferring this to a bowl because the pan retains some heat and we don’t want to besan to brown at the bottom
Step 3) Meanwhile lets powder some sugar along with this add 3 pods of cardamom to get a nice flavor and grind it to a fine powder.Add the powdered sugar to the besan and also add some broken cashew nuts mix well I am going to use my hands to break all the lumps and mix everything together
Step 4) Once all the ingredients are well combined lets shape it into medium sized balls. From 1.5 cups of besan we get around 15 medium sized laddus.Use some pressure when forming the balls so that they don't come apart.
