1/2 tsp | Baking Soda |
1/4 tsp | Salt |

*add salt - Salt is used to retain the heat (a layer of 1/2 inch thickness)
*and then place a wire rack - to prevent direct heating and browning
*and then a perforated plate and close the cooker.
We need to preheat the cooker for 15 minutes on a medium heat without adding the Cooker weight.
Step 2) For making banana muffins we need 3 fully ripe bananas. In a large bowl first add the bananas and with a help of a fork mash them nicely until you get a paste like consistency, it should still have some small chunks in it, which adds texture to the muffins.If you are using small bananas then we need 1 cup after mashing.
Step 3) After mashing add vegetable oil ,eggs, vanilla extract, sugar and mix everything together .Once combined add All purpose flour / Maida then along with this add baking powder, Baking Soda and a pinch of salt,mix all the ingredients together and this is how it looks it should not be very thick and at the same time should not be watery. Finally add the chocolate chips to this and mix this in and incorporate nicely.I have use semi-sweet Chocolate.
Step 4) Now lets line the cup cake tray with some muffin liners.Then take a scoop of batter and fill into the muffin liners.If you want you can add some chocolate chips on the top. Fill the liners to about 3/4th do not overfill them. Bake this in the oven Oven for 16 - 20 minutes (It took exactly 18 minutes for me)
Step 5) And now for the cooker we cannot keep them directly inside,because there will be lot of heat transferred from the cooker to the base of the cupcakes and it will have a burnt taste and since we are not using a muffin pan we need to add further stability to the cupcake liners so I found that trimmed paper cups works excellent for this purposed.Cut the paper cups to about the same height of the muffin liners and place the cup cake liner inside and again take a scoop of batter and fill into the muffin liners.(do not use plastic cups)
Step 6) Place the Filled Cup cake cups on a plate (I have used ever silver masala box). They are ready to go inside the cooker.Bake this for 16 - 20 minutes without adding the cooker weight on a medium heat.The cooking time will vary depending on the amount of batter used in each mold.After 16 -17 minutes check it once if you insert a tooth pick it should come out clean. If it is not ready you need to adjust the cooking time accordingly.
Since we have kept them side the paper cups the bottom will will stay clear and there is no burnt marks.
Our Delicious Cup cakes are ready to be served, Since we have added Bananas and Chocolate chips I don't prefer any butter cream topping on the top. Because Banana Cup cake by itself tastes awesome.
