Egg Curry Recipe

Egg Curry is a delicious recipe which goes excellent with Chapatti, Roti and Rice.There are lots of variations we can make with this recipe, I am sharing a simple egg Curry Recipe which is well seasoned first and then added to a curry base. I have added coconut to add richness and thickness to the recipe but you can make the same without the coconut as well. This Egg Curry recipe is loved by all groups of people and its is an excellent source of protein .

Quantity Ingredients for Egg Curry Recipe
6 Boiled eggs
For Seasoning Eggs
1 tsp Oil
1/8 tsp Turmeric powder
1 tsp chili powder
1/4 tsp pepper powder

Salt

For Egg Curry Recipe
2 tbsp Oil

1 Cinnamon Stick, 3 cloves, 2 cardamom
1/2 tsp Cumin Seeds
2 Onions
1 Tomato
Green Chilies
1 tbspGinger Garlic Paste
1/2 tsp Turmeric Powder
1 tsp Garam Masala Powder
1 tsp Coriander powder
2 tsp  Chili powder
1/2 cup Coconut 

Salt to Taste

Required Water

Coriander Leaves


Cooking Method


Step 1) Seasoning the Eggs:
Boil 6 eggs and discard the shell. Make few slits on the eggs or you can cut them into halves if you prefer.
Now to season heat oil and add chili powder,  turmeric powder, salt , little pepper and mix nicely.
Place the eggs and sauté it for a couple of minutes on a medium heat.


Step 2 ) 
Now to make gravy heat some oil and for flavoring add whole spices - cinnamon stick, cloves, cardamom and cumin seeds.Next add finely chopped onions and some salt and saute until golden brown.


Step 3)
Add ginger garlic paste, green chilies and the masalas - Turmeric powder, Coriander powder, Garam masala, Chlili powder and mix well. If required add a little of water to prevent the masalas from burning.
Next add in finely chopped tomato and cook until everything turns into a paste.


Step 4) 
Once the tomatoes are nice and soft add enough water and let it cook for some time.
If you prefer a smooth gravy then you can grind the onion and tomatoes into a fine paste and then continue on with the recipe but I prefer to have some texture in my gravy and so I am going to continue at is it.


Step 5) Coconut Milk:
In a blender add grated coconut with some water and grind it to a fine paste. Adding Coconut adds thickens and richness to the gravy.


Step 6) Egg Curry:
Add the coconut milk and let it boil for some time. Once the entire gravy comes to a boil add in the seasoned eggs and let it cook for a couple of more minutes.


Step 7) Garnishing: 
Finally garnish it with some coriander leaves and turn off the heat.



Our delicious Egg Curry is ready to be served. This is an curry is an excellent companion for Chapathi, Roti , Rice and Dosa. This also goes very well with Appam, Appam and Muttai Curry is a staple food in Kerala.

Perfect Boiled eggs:
To make perfect boiled eggs add the eggs to a pan and add enough water to cover the eggs, once the water comes to a boil turn down the heat to low and simmer for 8-10 minutes.
If you check after 8 minutes the white will be fully set and the yolk will be tender,
If you check after 10 minutes both the white and yolk will be set perfectly.
If you cook further then a green ring will be formed on the exterior of the yolk and will start to smell bad and will turn hard.
So after 8-10 minutes immediately transfer the egg to a separate bowl filled with ice or cold water to stop further cooking of the eggs and remove the shell.

  • 1 Tbsp Ginger Garlic paste
  • 1/2 tsp Turmeric Powder
  • 1 tsp Garam Masala Powder
  • 1 tsp Coriander powder
  • 2 tsp Chili powder
  • 1/2 cup Coconut
  • Coriander Leaves
  • Salt to Taste
  • Required Water
  • Curry Leaves


  • Instructions:
    1. season the eggs
    2. heat oil and add whole spices, Saute onion and tomatoes with the masalas
    3. add coconut paste and bring it to boil
    4. add eggs and cook for few minutes
    5. Garnish with coriander leaves and serve it with chapathi / idli / Dosa /Rice.
