|100 g||unsalted Butter (1/2 cup)|
|150 g||Maida (1 cup tightly packed)|
|1 tsp||lemon juice|
|5 tbsp||Cold water|
Step 1) freeze the butter for 2 hours or until solid.Similarly refrigerate water for 2 hours. We need cold water for making this recipe.
Step 2) Into a mixing bowl add maida (for 100 g of butter we need 150 g maida), some salt, 2 tbsp sugar, lemon juice and give it a mix. Then grate the frozen butter and mix it with maida. Now add cold water (we need approximately 5 tbsp) mix until combined.Wrap it and refrigerate for 1-2 hrs.
Step 3) Take the sheet out of the fridge and dust it with some flour(maida) and roll it (about 1 cm thick) then cut the edges to form a rectangle. Then spread sugar generously (1/4 cup). Fold about and inch from both the sides, sprinkle some sugar and fold it again from both the sides, finally sprinkle some sugar and apply some water and seal.(please refer video for the folds).
Step 4) Wrap and refrigerate or freeze for 30 min, now again dust with flour and cut it into small pieces.
Step 5) Preheat the oven to 400 F/ 200 C and bake for 10 minutes, flip it to other side and bake it again for another 5-6 min until golden. We can also fry the biscuit in medium hot oil until golden and crisp.
