Vegetable Soup Recipe

Vegetable Soup is the first thing to come in mind when we order in a restaurant. I am a big fan of soup and I have never skipped soup before any meal in a restaurant. Lets see how to make this easy veg soup. I have used water to make this recipe simple we can use ready made vegetable stock from the shops or we can make it at home which is way healthy and cost effective.

To make vegetable stock into a large pot add onion (cut into quarters) , carrot and 2 sticks of  celery, beans and potato. Crush Garlic and pepper and add it to the pot to get nice flavor. Add some salt and finally add plenty of water and bring it to a boil.Once it comes to a boil turn down the heat to low and let it simmer for minimum 1 hour.
After 1 hour pour it through a strainer and collect the clear stock.That's it our vegetable stock is ready, you can keep it in the refrigerator and use it in other recipes whenever you want.

Quantity Ingredients for Vegetable Soup Recipe
1 tspButter
2 clovesGarlic
1/4 cupOnion
1Carrot
10Beans
1 cupCorn Kernels (1/2 for grinding + 1/2 )
2 tbspCorn flour + 1/4 cup water

Pepper Powder

Salt to taste

Coriander or spring leaves for garnishing 

Cooking Method


Step 1)
Grind 1/2 cup of corn kernels and keep it aside, Adding corn paste to the soup enhances the taste and thickens the soup as well. Finely chop all the vegetables. 



Step 2) 
In a pan melt butter and add minced garlic and saute it for few seconds. Then add onion and saute it for a minute. Now add all the vegetables and the corn paste.



Step 3)
Add 4-5 cups of water or vegetable stock, add in required salt ,cover and cook for 20 -25 minutes.
After 20 minutes add the slurry to thicken the soup. To make slurry dissolve 2 tbsp of corn flour or corn starch in water and add it to the soup and cook for few more minutes.
Finally add required  pepper and mix well.



Step 4) Finally add spring onion or coriander leaves for garnishing and turn off the heat. If would prefer dark color add a tsp of soy sauce at the end before turning down the heat.


That's it our delicious Sweet Corn Vegetable soup is ready to be served. Sprinkle some pepper on the top before serving.See how easy it is to prepare this soup.The same process you can follow for Chicken soup , I have a recipe for Sweet corn chicken soup as well.
