Sweet Corn Chicken Soup Recipe

Sweet corn chicken soup is the first to come in mind when we enter a restaurant. I am a big fan of Chicken soup and I have never skipped my favorite Chicken clear soup before any meal in a restaurant. When i was young i wondered how do they get the perfect strands of eggs and I thought that soup was really hard to make, we need lot of ingredients like chicken stock and lot more to get that consistency and taste but my cousin brother prepared this delicious soup for me one day and I was surprised that with basic ingredients like corn paste and corn starch we will be able to get that awesome texture and consistency!!!! wow so from then on i stopped wasting money on costly soups and I started to make it by myself.
You can use ready made chicken stock from the shops for making Chicken soup or we can make it at home in a lower cost.Originally chicken stock is made only with chicken bones and skin, but to make chicken soup we need some chicken pieces so I have taken chicken with some meat in it to make chicken stock.After filtering the sock lets make use of the chicken.

Quantity Ingredients for Chicken Soup Recipe

For Chicken Stock
1/2 kg Chicken with bones
Onion
1 Carrot
Celery sticks
4 cloves of Garlic
1 tsp  Pepper corms

Salt to taste

Water

For Sweet corn Chicken Soup
1 tspButter
3/4 cupCorn Kernels
3/4 cupCorn (take 3/4 cup of corn kernels and ground into a paste)
1 bunch Spring Onions
1Egg

Pepper Powder

Salt to taste

Cooking Method


Step 1) How to make Chicken Stock ? 
Lets start with making chicken stock, in a large pot add the chicken pieces, then the onion (cut into quarters) , carrot and 2 sticks of  celery. Crush Garlic and pepper and add it to the chicken to get nice flavor.Add some salt and finally add plenty of water and bring it to a boil.Once it comes to a boil turn down the heat to low and let it simmer for 45 minutes to 1 hour.
After 1 hour remove the excess fat floating on the surface of the stock and pick the pieces out. Pour it through a strainer and collect the clear stock.That's it our chicken stock is ready, you can keep it in the refrigerator and use it in other  recipes whenever you want.

Step 2) preparing the Chicken
Now shred the flesh from the chicken and cut it into small pieces.Since we have cooked the chicken for 1 hour the meat will be soft and tender.

Step 3) Preparing corn
To get more flavor and taste grind half of the corn Kernels in a blender and keep it aside.Adding corn paste to the soup enhances the taste and thickens the soup as well.

Step 4) Spring Onions 
Cut the spring onions into three, 1 inch from the root, the white stalk and the green part.Whites we will add early in the recipe and the green portion we will add at the end. Do not throw away the roots,plant them they will grow fast from the tip and will last for a long time and you can harvest whenever you want it will keep on growing.

Step 5) Making Sweet corn chicken soup
In a pan melt butter and add the whites of the spring onions and saute it for a few seconds.Then add the corn kernals, ground corn paste, shredded chicken and mix well.


Add chicken stock 4-5 cups of chicken stock and to thicken the soup dissolve 2 tbsp of corn flour or corn starch in water and add it to the soup.Finally add required salt and pepper,git it a mix and cook for 8-10 minutes on a medium heat.

Step 6) Adding Egg
now after 8-10 minutes beat one egg nicely and slowly and gradually add it to the soup and mix with a spoon.Finally add greens of the spring onions turn off the heat

That's it our delicious Sweet Corn Chicken soup is ready to be served. Sprinkle some pepper on the top before serving.See how easy it is to prepare this soup.The same process you can follow for vegetable soup just replace the chicken with more vegetables and mushrooms.

  • If you want a deep color then brown the chicken first with little bit of oil and then add the vegetables and water to make chicken stock.

Ingredients:
  • For Chicken Stock
  • 1/2 kg Chicken with bones
  • 1 Onion
  • 1 Carrot

  • 1 tsp Butter
  • 1 1/2 cup Corn Kernels
  • Spring onions
  • 1 Egg
  • Pepper Powder
  • Salt to taste
Instructions:

  1. Step 1:- Make chicken Stock by simmering all the ingredients listed below "For Chicken Stock " for 46-60 minutes
  2. Step 2:- filter the stock and remove the pieces and shred the chicken.
  3. Step 3:- Ground half of the corn kernels
  4. Step 4:- melt butter and add whites of spring onions, corn, corn paste and the shredded chicken
  5. Step 5:- Add chicken stock and corn flour mixture and also add salt and pepper for seasoning
  6. Step 6:- Cook for 8-10 minutes and add 1 beaten egg
  7. Step 7:- Finally add chopped spring onions and serve
