200 ml | Oil ( I have used sunflower oil) |
1/4 tsp | Mustard powder or 1 tsp Mustard sauce |
1 tbsp | Vinegar |
2 tsp | Lemon Juice |
1/4 tsp | Pepper powder |
1/2 tsp | Salt |
Cooking Method |
Step 1) Powder mustard seeds in a mortar and pestle and keep it aside.
In a bowl add 2 egg yolks and add the powdered mustard powder.If you have mustard sauce then use 1 tsp of mustard sauce instead of mustard powder.mix once.For 2 yolks we can use approximately 200 - 250 ml of oil
Step 2) Add oil drop by drop and beat it well , do not add too much of oil at once.If we add more oil at one go then the yolk and the oil will not combine well and we will end up in a clumsy mayonnaise so be very careful and add very little at a time and keep on mixing.After adding about half of oil add Vinegar, lemon juice, pepper powder and salt.Mix well and then continue to add oil slowly .Mix well with a wire whisk.
Step 3) Once you get a thick smooth paste transfer the mayonnaise to a clean bottle and and put it in the fridge and use whenever needed.I have used exactly 200 ml of oil.
You can use an electric beater or food processor to speed up the process.
Use any flavorless oil for making Mayonnaise recipe.

ReplyDeleteநேற்று செய்து ஃப்ரிட்ஜ் ல் வைத்திருந்தேன்.. இன்று வெளியில் எடுத்து கொஞ்ச நேரம் கழித்துப்பார்த்தால்.. எண்ணையும் மிக்சிங்-ம் தனித்தனியே பிரிந்து விட்டது🤔
