Paal Kozhukattai is a breakfast recipe enjoyed during festival days. These kozhukattais are cooked in coconut milk adding so much flavor and taste. When they are boiled the soak in all the flavor from the coconut and will stay soft on the inside. The thickened coconut milk is also creamy and delicious to eat.

Ingredients:
Rice Flour / Arisi Mavu - 1 cup
Thick Coconut Milk - 1 cup
Water - 1 1/2 cup
Cardamom Powder
- 1 tsp
Ghee - 1 tsp
Salt - 1/2 tsp
Sugar - 1/2 cup or to taste
Method:
Take rice flour in a bowl and add in water.
Mix well so it forms into a smooth batter.
Heat a kadai and pour this batter in it.
Cook this on low heat stiring constantly so it
thickens and leaves the sides of the pan and form into a dough.
Remove the dough into a bowl and let it cool a
little. Add ghee to it and knead into a smooth dough.
Apply ghee on your fingers. Take small portions
from it and form into tiny little balls.
Now heat thin coconut milk in a vessel . Let it
come to a good boil.
Once it starts boiling add the small kozhukattai
in the milk slowly.
The milk should be always boiling when you add
the kozhukattai. So add the balls slowly.
Let this cook for 5 mins. Now add in sugar and
cardamom powder and mix well. Let this simmer for 2 mins.
Now switch off the heat and add the thicker
creamier coconut milk.
Mix well and serve.
(instead
of sugar can use jaggery )
