Jigarthanda recipe

Jigarthanda is a famous recipe of Madurai, which is super delicious made with caramel and cream. This recipe is a blend of caramel syrup, thick milk cream, milk, almond gum and ice cream. Lets see how to make this delicious Jigarthanda recipe.




Serves          : 4
Prep Time   : 30 min
Cook Time  : 30 min

Quantity Ingredients for Jigarthanda
4 Almond gum
1 cup Water
1/2 cup Sugar 
1/2 cup boiling Water
1/2 L full fat milk
2 tbsp Sugar
1/2 L   Full fat Milk
2 tbsp Sugar
2 tbsp Nanari sarbath
2 scoop Vanilla ice cream

Cooking Method


Step 1) Soak Almond gum in water overnight and let it bloom.

Step 2) Into a sauce pan caramelize 1/2 cup sugar and once it turns golden add 1/2 cup boiling water and keep it aside.

Step 3)  Into a pan heat 1/2 Liter Milk , add 12 tbsp Sugar and boil milk until thickens (cream consistency). Keep it aside.

Step 4) Into a  pan boil 1/2 L milk and add half of the caramelized Sugar and also add in 2 tbsp  Sugar  and let it boil for 5 min. Keep it in the fridge to chill. 

Step 5) For the ice-cream we can either use store bought vanilla ice cream or we can make homemade ice cream. I have made a simple jigarthanda icecream by mixing the leftover caramelized sugar syrup to store bought vanilla ice-cream and freezing it again.

Step 6) Now its time for assembling. Into a glass tumbler add badam pisin / almond gum from step 1. then add 2 tbsp of Nanari sarbath, milk cream from step 3 .Then add milk from step 4 , mix some ice crem in an finally top it with jigarthanda icecream and sugar syrup.
