Cook Time  :   20 min

Quantity Ingredients for making Udacha Muttai Kulambu
2 tbsp Oil
1/4 tsp Mustard seeds

1 Cinnamon, 2 cloves, 2 cardamom
1 tsp Fennel seeds
2 larde Onion
1Ginger garlic paste
2 Green chilies
few Curry leaves
1/4 tsp Turmeric powder
1 tsp Garam masala
1 tsp Coriander powder
2 tsp Chili powder
2 large tomatoes
5 Eggs
required Water
required Salt

Coriander leaves for garnishing

Cooking Method

Step 1) Heat oil in a pan and temper with mustard seeds, Cinnamon, cardamom, clove, fennel seeds. Then add in finely chopped onion , ginger garlic paste, green chilies, curry leaves and saute until golden brown.

Step 2) Now lets add the masalas - Turmeric powder, Coriander powder, Garam masala, Chili powder and mix well. If required add a little bit of water to prevent the masalas from burning. Next add in finely chopped tomatoes and cook until everything turns into a paste.

Step 5) Once the tomatoes are nice and soft add  water, required salt and let it cook for few more minutes. Beat one egg and add it to the boiling gravy and stir,  adding egg thickens the gravy. Now break open 4 eggs and drop it directly into the curry. Cover and let it cook for 5 minutes.

Step 4) Now if required flip the eggs to the other side and cook for few more minutes - 2 to 5 minutes. Finally garnish with coriander leaves and turn off the heat.

Our delicious Egg Curry is ready to be served. This curry is an excellent companion for Chapathi, Roti , Rice and Dosa. Please do try this recipe and spread the joy of cooking !!!
