Chicken Curry Recipe / Chicken Curry without Coconut

Chicken Curry is a basic yet delicious recipe which is loved by most people. It is very famous among non veg fans ,this recipe goes excellent with most of the main dish recipes like - Rice ,Chapathi, Idiyappam, Idli, dosa and my favorite combination is with Aapam, how can i forget this combination "Parotta and chicken curry- the best recipe ever"  .
There are lot of variations we can make with this chicken curry, This is a simple method of making chicken curry without coconut. The freshly ground masala adds unique taste and flavor to the recipe.
We can make this masala in large quantity and use whenever required.

Quantity Ingredients for Chicken Curry Recipe
500 g Chicken with bones

For Roasting
1 tbspCoriander seeds
1 tspFennel seeds
1 tspCumin seeds
1 tbspPepper corns

1 Cinnamon stick , 3 cardamom, 4 cloves

For Chicken Curry
2 tbsp Oil
2 Onions
1 tbsp Ginger Garlic paste
1/2 tsp Turmeric powder
2-3 tsp Chili powder or to taste
2 Tomatoes

Required water

Salt to taste

Coriander leaves

Cooking Method


Step 1) Dry roast the whole spices - Coriander seeds, Fennel, cumin, pepper, cinnamon, cloves and cardamom on a medium heat until you feel the nice aroma. Be careful while roasting , do not burn the spices.
Once roasted transfer the spices to a blender and grind it to a fine powder.



Step 2) heat oil in a pan and saute the finely chopped onions, once the onions turns golden add the rest of the masalas - ginger garlic paste, Turmeric powder, red chili powder (we can also use kashmiri chili powder to get nice color) .Mix well and then add the finely chopped tomatoes, some water and cook for 6-7 minutes. 



Step 3) Once the onions and the tomatoes turns soft add the cleaned chicken pieces and mix well with the onion masala mixture. Always prefer chicken with bones for making chicken curry .
Also add required water, required salt , cover and cook for 20 - 25 minutes based on the size of your chicken pieces. 
If you like to use coconut - grind 1/2 cup of coconut and add it to the recipe towards the end.



Once the chicken is fully done garnish with coriander leaves and turn off the heat.That's it our quick and easy chicken curry is ready to be enjoyed. I had this delicious chicken curry with some soft Chapathi.

Ingredients:
    For Roasting / Chicken masala

  • 1 tbsp Ginger garlic paste
  • 2 Tomatoes

  • Coriander leaves for Garnishing
Instructions:

  1. Dry roast all the whole spices and grind
  2. Heat oil and saute the onions, add the masalas and tomatoes, cover and cook for sometime
  3. Add the chicken pieces and mix well with the masalas, add required water, salt and cook for 20-25 minutes
  4. Garnish it with coriander leaves
  5. Our delicious chicken curry without coconut milk is ready to be served.
