Kaju Pista Roll is a celebratory sweet of India distributed during festivals and most weddings. This sweet is made from nuts - cashews and pistachios. This melt in your mouth sweet is quick and easy to make. Lets see how to make this recipe.

For Pista Stuffing | |
1/2 cup | Pistachios (60 gram) |
2 tbsp | Sugar (12 g) |
2 | Cardamom |
1 tbsp | Milk |
pinch of | Green food color (optional) |
For Cashew | |
1 cup | Cashews (150 gram) |
2 tbsp | Milk powder |
1/2 cup | Sugar (100 gram) |
1/4 cup | Water |
some ghee for greasing | |
Cooking Method |
Step 1)
Into a blender add sugar, cardamom and grind it to a fine powder and set it aside.
Step 2)
Now in the same blender add the pistachios and grind it to a semi fine powder. Do not grind it for a long time, give few pulses at a time, otherwise it will release oil. Give few pulses and powder it.
Step 3)
Sieve both sugar and pistachio powder to collect any big chunks. Now mix pinch of green food color to milk and add it to the pista powder and make a smooth ball. Do not add too much of milk, we just need a tsp of milk.
Step 4)
Now grind the cashews as we did with pistachios, in small pulses. I used 2 batches to grind cashes. If we grind for a longer duration then oil separates from the cashews.
Once done transfer it to a sieve and also add milk powder ( I have used Nido milk powder).
Step 5)
Now in a pan add sugar, water and bring the sugar syrup to 1 string consistency. Now add the powdered Cashews from step 4 and cook for few minutes until everything comes together. Do not cook for a long time.Let it cool for some time.
Step 6)
Now roll the cashew mix thin and cut it into 2 halves, divide the pista ball into 2 and roll it into a cylinder and place the pista roll on one side of the cashew sheet and start rolling. Cut it into desired length, similarly do with the other pista and cashew.
