Lunch Box - 3 / Vegetable Rice, Spicy Egg Roast

This is the third lunch box in our lunch box series and today we will look at the recipe to make Healthy vegetable rice and spicy Egg roast .

Serving Size          : 2 people

Preparation Time : 15 min

Cooking Time       : 30 mins


Quantity Ingredients for making Vegetable Rice
3 cup Cooked Rice
1 tbsp Oil
1/2 inch Ginger
1/2  Onion
1 Carrot
8Green Beans
1/4  Cabbage
1/4 cupPeas
1/4 cup Cooked Corn


Quantity Ingredients for Spicy Egg Roast
1 tbsp Oil
1/8 tsp Turmeric
1/2 tsp Chili powder
1/8 tsp Pepper 
required Salt
1 Curry leaves
2Boiled Eggs
Quantity Others
handful mixed Nuts
handful Vagadagam / Fryums
1 Orange

Cooking Method

For Vegetable Rice:

Step 1) Soak the Basmati rice in water for 20 minutes and cook in water with some salt until the rice is 90% cooked..Do not over cook the rice.

Step 2) Heat oil in a pan and add finely chopped ginger, finely chopped garlic , Green Chilies and saute it for few seconds. Then add in sliced onion and mix it. Now to this add cubed Carrot, Cabbage, Beans , Corn, Peas and cook until the veggies are 80 -90% cooked do not overcook the vegetables we still need to retain some texture of the veggies.

Step 3) Then add the cooked basmati rice and mix everything very gently and carefully, do not break the rice, freshly ground pepper, some salt and mix well.

For Spicy Eggs:

Step 1) Slice the cooked eggs

Step 2) Heat oil and add chili powder, turmeric powder , Pepper, Curry leaves and some salt. Add the sliced eggs and roast 2 minutes on both the sides and keep it aside.
