Step 5) As you can see it has started changing its color, keep on stirring until it reaches 310 F or 155 C. Keep on medium heat or it soon become dark and tastes bitter. Once it reaches that particular consistency turn off the heat , if we cook longer then it will turn hard and will taste bitter.
Step 3) If you don't have a thermometer then pour a spoon full of sugar - butter mixture into a bowl of cold water (chill water) , if it breaks instantly then the consistency of the toffee mix is perfect. if it doesn't become hard and it you can press it then the consistency is incorrect, we need to heat little longer.
Step 4) Immediately pour the mix to a wide pan and sprinkle some roasted cashews on top, we can also use almonds, pistachio and walnuts. I have divided it into two and have spread some chocolate over other half and then topped with nuts. Allow it to cool for 2 -3 hours before breaking.
