Pongal is a traditional recipe of Tamil Nadu often enjoyed during "Pongal festival" This is one of the Very important festivals celebrated by our Tamil People, This Harvest festival is celebrated as Thanks Giving to Sun . Traditionally this recipe is made with first harvest from the field, We had a paddy farm very long back, at that time my dad used to bring fresh new rice from the paddy field , I still remember the smell of the rice ,wow !!!! Pongal made with fresh / new rice is loaded with loads of taste and aroma. Lets see how to make this delicious Sweet pongal / Sakarai pongal.

1 tsp Ghee + 1 tbsp (roasting nuts) + 4 tbsp (final) | |
1 cup | Raw Rice / பச்சரிசி (200g) |
1/2 cup | Moong Dal / பாசிப்பருப்பு (100g) |
2 cup | Jaggery (400g) |
4 cup | Water |
1 cup | Milk |
10-12 | Cashew nuts |
2 tbsp | Raisins |
1 tsp | Cardamom powder |
Cooking Method |
We need to cook the rice until turns soft and mushy, that is the reason we are adding more water.
Step 3) Melt ghee and roast cashews and raisins and keep it aside. Now in the same pan add powdered jaggey, water and melt. Strain the jaggery syrup to collect any dirt.
Step 4) Add the jaggery syrup to the cooked rice and dal and mix well. Finally add cardamom powder, roasted nuts and plenty of ghee and mix well. Cook for 2 more minutes and turn off the heat.

Wooden spoons are adivisable. I don't have a preferred brand. I use the ones made from bamboo.
