Serving Size               :  4 - 6

Preparation Time      : 10 min

Cooking Time            : 30 min

Quantity Ingredients for Sweet Pongal Recipe

1 tsp Ghee + 1 tbsp (roasting nuts) + 4 tbsp (final)
1 cup Raw Rice / பச்சரிசி (200g)
1/2 cupMoong Dal / பாசிப்பருப்பு (100g)
2 cupJaggery (400g)
4 cup Water
1 cupMilk
10-12 Cashew nuts
2 tbsp Raisins
1 tsp Cardamom powder

Cooking Method

Step 1) Melt ghee in a cooker and roast dal over medium heat for a couple of minutes. Dal should not change its color. Once you feel the nice aroma of the dal add rice and mix well (I have rinsed  the rice in water for couple of times)

Step 2) Next lets add water,  For (1 cup rice +.5 cup dal ) we will need 5 cups of water. I have used 4 cups of water and 1 cup milk (milk gives richness to the recipe) , You can skip milk and add water if you prefer. Cover and let it cook for 4 to 5 whistles on a medium heat.
We need to cook the rice until turns soft and mushy, that is the reason we are adding more water.

Step 3) Melt ghee and roast cashews and raisins and keep it aside. Now in the same pan add powdered jaggey, water and melt. Strain the jaggery syrup to collect any dirt.

Step 4) Add the jaggery syrup to the cooked rice and dal and mix well. Finally add cardamom powder, roasted nuts and plenty of ghee and mix well. Cook for 2 more minutes and turn off the heat.

That's it our delicious sweet pongal /  sakkarai pongal is ready to be enjoyed :) Please do try this recipe at home and share it with your friends and family.
Spread the joy of cooking !!!!
Happy Pongal.
