Egg white Chilli Recipe

Egg chilli is an another delicious recipe made with egg whites and then deep frying them, I tasted this recipe from a famous restaurant at Nagercoil during my last trip to India. In this recipe I am not going to add any sauce , I am just going to use few masalas that is readily available at our kitchen.

Quantity Ingredients for Egg Chilli Recipe
4 Eggs (only the whites)
1/4 cup All purpose flour / Maida
1/4 cupCorn starch or corn flour
1 tspChili powder

Salt and Pepper

Water

For Egg Chilli
3 tbsp Oil
1/4 tsp  Mustard seeds
1 tbsp Finely chopped Ginger
2 tbsp Finely chopped Garlic
5 Green chilies
4 dry red chilies
1 spring Curry leaves
3 Onion (finely chopped)
1/2 tsp  Cumin powder
1/4 tsp Garam masala
1 tsp Chili powder
1 Tomato
required Salt 
1/2  Lemon

Cooking Method


Step 1) Boiling eggs:
Break open 4 eggs and separate the yolks and the whites. Grease a box with oil and transfer the egg whites into that box and place it in water. 
Boil it for 15-20 minutes on medium heat.Run a knife through the edges and cut the steamed eggs into desired shape and keep it aside.

Step 2) Frying the Eggs:
In a mixing bowl add maida ,corn flour, chili powder ,Pepper , salt add water and mix well to for a semi thick batter. Coat the cooked eggs and fry it in hot oil. Once they become crispy take it off from the oil and set aside.

Step 3)  Now in a pan heat oil and add Mustard seeds, finely chopped ginger, chopped garlic, Green chilies, red chilies, Curry leaves and saute it for a minute until the raw smell is gone.Then add chopped onions and saute until it turns golden brown. Then add the masalas - Cumin powder, Garam masala and chili powder.

Step 4) Now to this add tomato and cook until oil separates. Now add bell peppers / Capsicum and cook for a couple of minutes.

Step 5)  Add the fried eggs and finally add required salt, lemon juice and mix well until its covered with the masalas.

That's it our delicious egg chilli is ready to be served with Rice,naan, fried rice and roti.
