Sorakkai payasam also known as Bottle gourd Kheer is one of the easiest payasam to make , its both delicious and healthy too. This Payasam is served in functions and during festivals. This payasam is made with 3 main ingredients Bottle gourd, Milk, Sugar and roasted nuts. Because of its simplicity I make this Payasam very often lets say too often.. That simple and easy it is to prepare. So lets see how to make this payasam.

Step 1) Boil full fat milk and reduce it to half, Keep on low flame and stir it often to prevent burning of milk. Scrape the edges to collect milk fat.
Step 2) Melt ghee in a pan and roast the nuts. Transfer it to a plate and now in the same pan add the grated bottle gourd / sorakkai and saute it until the raw smell is gone, it takes approximately 5- 6 minutes.Keep it aside.

Step 3) Once the is reduced to half and cardamom powder, saffron strands and then add sugar and mix well.
Step 4) Now add in the cooked bottle gourd and cook for another 5- 7 minutes. Finally add in the roasted nuts and mix well and that's it.
Notes:
- Serve chill if you wish to make kheer.
- Once the payasam is cooled or refrigerated it becomes thick so if required add hot milk to it before serving to get payasam consistency.
- You can also use Condensed milk to enhance the taste.
