Javvarisi payasam also known as Sogo Kheer is one of the easiest and delicious Payasam enjoyed during all festivals and functions . This payasam is made with Javvarisi, Milk, Sugar and roasted nuts. Because of its simplicity I make this Javvarisi Payasam very often lets say too often.. on every weekend. That simple and easy it is to prepare. So lets see how to make this payasam.

| 1/2 cup | Javvarisi / Sago (100 gram) |
| 2 cup | Water (500 ml) |
| 2 cup | Milk (500 ml) |
| 1/2 cup | Sugar (100 gram) |
| 1 tbsp | Ghee |
| 2 tbsp | Cashews |
| 2 tbsp | Raisins |
| 2 tbsp | Almonds |
| 3 | Cardamom |
| 10 strand | Saffron (optimal) |
Cooking Method |
Step 1) Soak Javvarisi in water for 1 hour, Soaking in water speeds up the cooking time of Javvarisi , otherwise it takes longer duration to get cooked completely. Add water to a pan and bring it to a boil. Once the water boils add the soaked Javvarisi and cook until transparent.
Step 2) Once transparent add hot Milk to it and let it boil for few more minutes. Then add sugar to it and let it cook for another 5 minutes.
Step 3) Now in a separate pan melt ghee and roast the nuts - cashews and almonds, once golden add raisins and roast until raisins are ballooned. Add the roasted nuts to the payasam, also add crushed Cardamom or cardamom powder and few strands of saffron for a nice color. Mix well and that's it.
Notes:
- Once the payasam is cooled or refrigerated it becomes thick so add hot milk to it before serving to get that proper consistency.
- You can also use Condensed milk to enhance the taste.
