Semiya Kesari Recipe

Semiya  Kesari is a classic recipe of Tamil Nadu made with semiya / vermicelli and sugar. This is very simple and easy to make and I guarantee you that this recipe will never fail on you. This is a perfect dessert for beginners because all we need is few basic ingredients and very less time.Lets get started.

Prep Time        : 5 minutes

Cooking Time  : 20 minutes

Quantity Ingredients for Rava Kesari Recipe
1 cup Semiya / Vermicelli
3/4 cupSugar
3-4 tbsp Ghee
15 Cashew nuts
2 tbsp Raisins
pinch Cardamom powder
pinch Salt
pinch Orange food color (optional)
2 cupsWater 

Cooking Method


Step 1) Add some Ghee in a pan and roast cashews first,once it turn golden add the raisins and roast until they are ballooned, do not burn them (they will taste bitter if burnt).
Now add semiya and roast it nicely until you get a nice aroma and golden color. It will take around 8-10 minutes.when it obtains golden color remove the pan from heat and immediately transfer it to a plate to prevent browning.


Step 2) And again in the same pan add water. For this recipe I have taken two cups of water for 1 cup of semiya. Once the water comes to a boil  add the roasted semiya and and stir and cook until all the water is absorbed by the semiya.


Step 3) Once all the water has been absorbed add Sugar and mix well (do not add sugar before the semiya is well cooked). The ratio of semiya  to sugar can be adjusted according to your sweet preference, A ratio of 1:1 ie 1 cup of sugar for 1 cup of semiya is preferred by most people. However if you prefer a moderate sweetness you can use ¾ cup of sugar per cup of semiya (I have used 3/4 cup).

Step 4) Add food color if you prefer , dissolve some color powder in water and then add to get even distribution. Next add the rest of the ghee, cardamom powder, roasted nuts and incorporate well, adding Ghee at the end of the recipe enhances the taste and the flavor.


Step 5) Mix well and cook until dry, if you do not roast the semiya until golden brown then it might be sticky and will not have individual strands.


Our Delicious and Yummy Semiya kesari is ready to be served. As I mentioned earlier you can serve this dessert with any breakfast recipes.This is more tastier than regular kesari and taste much better.
