Kulfi is a famous Indian dessert made with few simple ingredients like milk , Sugar and nuts. Due to the addition of condended milk this recipe is going to be rich creamy and is going to melt in our mouth. Summer is around, lets beat the heat with this delicious homemade kulfi recipe. Since mangoes are also in season I am going to make mango Kulfi as well. Lets start the preparation.

3 cup | Full fat Milk (750 ml) |
1/4 cup | Condensed Milk (60 ml) |
1/4 cup | Sugar (50 g) |
10 -12 | chopped Almonds |
10 -12 | chopped Pistachios |
1/4 tsp | Cardamom powder |
10 | Saffron strands (optional) |
1/2 cup | Mango for mango Kulfi |
Cooking Method |
Step 1) Heat milk in a pan and simmer it for 15 - 20 minutes until the milk thickens. Then add sweetened condensed milk and stir well. Condensed milk adds creaminess to the recipe, If you don't have condensed milk skip and add more sugar.
Step 2 ) Also add in sugar. Simmer for few more minutes. Then add the chopped almonds, pistachios, cardamom powder and saffron ( saffron is optional ). Cook for 10 more minutes or until the milk thickens and looks creamy.
Step 3) This is the consistency of the kulfi mix, if there is more water content then the kulfi will not be creamy and will be more like ice. Make sure the mix is nice and thick.
Step 4) Let the mix cool, once cooled transfer it to kulfi mold or a tumbler, cover it with an aluminum foil or plastic wrap , insert a ice cream stick and let it freeze for 8 -10 hours before serving.
Step 5) For mango kulfi we need half a cup of pureed mangoes , mix with the cooled kulfi mix and combine well. transfer it to kulfi mold or a tumbler, cover it with an aluminum foil or plastic wrap , insert a ice cream stick and let it freeze for 8 -10 hours before serving.

SINCE IT WAS THE FIRST TIME, I COULDN'T GET CONSISTENCY OF THE MILK, SO TURNED BIT THICK WHEN COOLED DOWN. BUT STILL WAS SO YUMMY.
NOW MY QUESTION IS, HOW LONG THE KULFI CAN LAST IN THE FRIDGE? CAN IT LAST MORE THAN 5 DAYS?

ReplyDeleteMix the Nestle Milkmaid Sweetened Condensed Milk and milk together in a pan. Bring to boil stirring continuously, reduce the flame and cook for 10-15 minutes stirring from time to time
Add the cornflour paste and continue to cook for 3-4 mins till the mixture is thick.
When cool add the puréed mango, mix well and pour into kulfi molds and freeze for 3-4 hours till set. Remove from molds, cut into 2 pieces and serve.

ReplyDeleteI tried it yesterday. Since it almost late could get condensed milk hence added sugar extra. Tried it in the double door freezer. But the kulfi didn't turn out solid. Any reason for the same.
