Homemade Milk Bun Recipe

Homemade Milk bun is a soft and fluffy recipe which is very fun to make at home. This milk buns are very similar to the one which we buy at our local bakeries. I have made a sweet version of it (sweet milk bun),  you can reduce the amount of sugar and use it as a side for pav bhaji masala.

Serving Size           : 4-5 people 

Resting Time         : 90 - 120 min + 30 min

Baking Time          : 20 - 25 minutes in Oven
                                : 18 - 22 minutes in Cooker
Difficulty:
Quantity Ingredients for Milk Bun Recipe

To activate yeast 
1 tspYeast (3 gram)
1/2 cupwarm Milk (120ml)
1 tspSugar(4 gram)

For the dough
2 cup Maida / All purpose flour (250 gram)
2-3 tbsp Sugar
1/4 tspSalt
3 tbspButter @ room temp (45 gram)
1 Egg

Cooking Method


Step 1) Activate Yeast:
Activating yeast is a very important step in making bread. Add Sugar to luke warm milk (105 F - 110 F), (42 - 43 C ) then add yeast to it and mix it well and let it sit for 5 - 10 minutes.
Once the yeast is activated lets prepare the dough.



Step 2) Preparing the dough:
In a mixing bowl combine Maida, salt , butter (softened at room temperature) , yeast milk mixture, and Egg. Mix well to form a soft and a sticky dough. This dough will be very sticky compared to other dough preparation. If you are vegetarian the use 1 tbsp butter and 2 - 3 tbsp of milk instead of 1 egg. 
Once well mixed transfer the dough to work surface and knead for minimum 10 - 12 minutes. Stretch the dough and knead well with 2 hands.


Step 3) First Proofing:
Once after kneading transfer the dough to a greased bowl , also apply few drops of oil on the top to prevent drying. Keep it undisturbed for 1.30 to 2 hours or until the dough doubles in size. Now after 1.30 hours (in my case 1.30 hours ) transfer the dough to work area and divide it into 9 equal portions. Spread the ball into sheet and roll it to form a smooth ball. 


Step 4) Second Proofing:
Keep in in a greased bread pan and cover it . Again proof for another 30 minutes or until it doubles in size.
Step 5) Baking:
Now preheat the oven to 350 F / 175 C and bake it for 20 -25 minutes or until the outer layer become dark (golden brown) .It took exactly 22 minutes for me.
Once baked apply some melted butter on top and let it cool for sometime before taking it out of the pan.


Step 6) Baking in Cooker:
Preheat the cooker with a layer of salt and a wire stand to elevate the pan from touching to the salt for 15 heat on medium heat . Place the pan and immediately close the lid and bake for 18 -22 minutes on medium heat.  It took exactly 20 minutes for me.
Once baked apply some melted butter on top and let it cool for sometime before taking it out of the pan.

  1. I tried your dinner rolls on stovetop. Didn’t add the egg. It took longer to cook. It was little over done at the bottom. What could be wrong?

  3. I tried the recipe without eggs by adding milk and butter. I kept the yeast to activate for 5-6 hours, I hope that could be the reason it smells awful, but friend said it is because the milk and extra that is added to the recipe . Please confirm how long does it requires to activate the yeast ?

    2. If yeast u dead it won't raise properly.. don't use yeast when it exceeds more than 30hr
